The reason breads and cookies get more dense with homegrind flouer is because alle the fibre in the wheatberries are still there. That is one of the reasons for this flour being more nutritious. Mixing in white flour make it fluffier and softer. If you want this result from your own grined flour you will need to sift it. (Sorry for any misspells, I didn't have my glasses and cant't see what I write 😀)
It all looks delicious. For the bagels,. you may want to try using dried blueberries and reconstitute them with the reserved water you were going to add for the dough mix. Doing it this way will do two things, it will be a more readily available product throughout the year, and it will be less tempermental to work with, having more control of the moisture.

They do, they help a lot! I have simply chosen not to share them on my channel. But yes, they are my big helpers! Peeling carrots is their favorite!

Wheatberries can last an incredibly long time as well, vs already milled flour. So many benefits to having a mill, you'll love it!
