- Pollo Asado is pretty common in my house, I make a lot of chicken tacos and burritos. So, this recipe is in rotation several times a week. Its an inexpensive meal and is very easy to make. The best part is you can do so much with it, tacos, salads, burritos, sandwiches. I mean you name it; I am sure this grilled marinated chicken you can do so much with it. Its tasty and easy to do, I hope you enjoy it!

Pollo Asado recipe:
3lbs of boneless chicken thighs
4 California chili pods
4 Guajillo Chili pods
1/2 onion
4 garlic cloves or 2 large cloves
1 orange
1 lime
1 tsp oregano
1/2 tsp cumin
2 tsp salt or to taste, but the marinade needs to be a little saltier, the meat doesn’t absorb all the sodium. So season slightly heavy.

Thanks for this video! I made this yesterday, and it was great. I used the juice of three sour oranges (instead of the orange and lime), and added a bit of honey to replace the sweetness from the orange. I didn't have access to a grill, so I roasted it in the oven at 425°F for about 25 minutes, then broiled the top for a few minutes until browned. The chicken did release a lot of moisture while cooking, so I drained that out of the pan halfway through the cook time. It made great tacos yesterday, and a great breakfast today.
I made this recipe and my family loved it. For the Superbowl I am doing a twist. marinating my chicken wings in this marinade. I am using salsa veranda with avocado for the dipping sauce. Thank you for the video
I just made this today for a small party at the house and it was a huge hit. Everyone asked for the recipe. I did 3lbs and did end up adding more salt while on the grill after a taster. You were right… more salt than you think you’ll need. Thx for sharing!
Since Dad is almost never home I wanna surprise him :)
Thats a good surprise, you cant beat pollo asado tacos. Be sure to let it marinate over night. I let mine sit for 48 hrs before grilling it.
This is an amazing recipe! Thoroughly enjoyed it!
This video is awesome! Like the way it's just chill. Good job brother.
Made this today and was delicious! Thanks for posting!👍
Making it today! Thanks for the recipe
Thanks for teaching us all your techniques bro. Respect.
I'm looking forward to trying this!
Been up and down UA-cam looking for a bona fide pollo asado recipe... Kirby my search ends here, delicous stuff, good lookin' out bro! 💯👊
I made this recipe twice it is amazing.
Excellent video!!! Im living in italy now and i miss the mexican-latin food.
This is the best pollo asado we’ve ever had. We did use whole chicken thighs and they were awesome. Thanks Kirby.
Glad you enjoyed it Wade, this was a menu item I had planned for a restaurant I had in mind.
marinated these 24 hours because I was short on time and they came out AMAZING. will go for 48 hrs next time to enhance even further.
Its my go to recipe, I used to sell tacos using this recipe. Along with my carne asada marinade.
Thank you man. This looks amazing
This looks like an awesome recipe
I'm from Australia and here we have this popular brand called Old El Paso and they make seasonings and stuff for tacos but maaaaan, I gave this a crack, I couldn't find the same chilis here that you used so I ended up using just regular red chilis and it came out really great. I love Mexican food... Awesome video!
El paso is not Mexican nor do Mexicans consume El Paso products 😂
Looks delicious! I am going to make this soon.
Man that looks good kirbs! Pollo asado done right and you're spot on about different ways to do it. Gotta have all the toppings!
Thank you Pickles, I love playing around with this marinade. It comes out great no matter what you do with it. Stay safe during these crazy times brotha.
This came out great. You did well.
Omg looks so delicious i never made dis but dang ur sauce u make and on da fixing da mesquite and yes i luv avacodo always thanks for sharing 🙏❤🤤🤤🤤
Looks delicious!
That chicken looks so delicious 😋
I’ve been trying to figure out how to make chicken like this.. I moved from AZ to NY and the Mexican food here is appalling... my husband and I used to live down the street from this market back in az and they made the best smoked chicken.. I cannot wait to make this! Thank you!
I hope you and your hubby enjoy it Keri, this is my go to recipe if I have time to make it. The key to this marinade is to let it sit. I would let it sit for 48 hours before I would serve a batch in my old lunch delivery. Let me know what you think of it. Thank you.
I'm from south phx, in Arizona an there is no place like home, the Mexican food there in phx arizona is so authentic, now here in Oklahoma shit is to americanized an I Hate it
"I moved from AZ to NY"
There's your problem.
NY is not know for Mexican food. If you want Latin food it’s going to be more Caribbean/Latin food.
I think I’ll freeze the leftover marinade and just bring it to a boil next time I want some more of this awesomeness. ❤
Hey Kirby - thanks so much for this recipe and the cooking technique. Made these tacos tonight and man they are the best pollo asado tacos I've had. Great job!
Kirby how do you make the habanero / pineapple marinade ?
Nice! I'm making this!
Looks amazing. I’d do indirect until about 175, and keep it off direct flame. But to each there own. Slow and sear for the win.
Thank you, sir, for this great recipe. I was considering going vegetarian, but then I found your videos. Hey, at least I thought about it!
Thankyou Kirby, I barbeque over wood and next batch of chicken I'm using this recipe. Thankyou again.
Had no idea Mexican food matched with radishes. Love those, you don’t often see them in any meals.
Must try recipe. Will be making this for taco Tuesday!
This is my go to recipe, I have to make it at least every 2 weeks.
Im going to get down on some Carne Asada this weekend!...Im hungry now!...LOL....
Hey Kirby, thanks for the recipe! I made this before and it was really good but this time I added a teaspoon of annato paste and some black pepper and OMG.....it was fantastic! I have tried several of your recipes and enjoyed them all. I like the way you explain things and show exactly what you're doing. Keep up the great work and again......muchas gracias!
Thank you Erich, I appreciate that. Getting some home renovations done, once that is out the way 2023 video session is going to happen. I hope you enjoy some of the new recipes I put out there.
@@CookingwithKirby I look forward to that!
One of the best recipes for chicken out there good stuff man 💪💪

I bet it smells sooo good by his house. I love when i smell my neighbors grilling.

This recipe looks fire!!! Gonna give it a try doggy!
I hope you enjoy it Andrew, its my go to recipe.
Trying to duplicate Chicken Express (Vallejo CA) recipe I grew up on. That place was omg amazing. I'm trying yours!
Love it. Gonna have to try it. Hope you are all well! 🥰
We have been great Audrey, you guys be safe out there. Prayers out to you and your family.
Kirby I accidentally tripped on this video of yours, we tried the recipe and thought it was fantastic, we don't have a charcoal BBQ, so to get the Mesquite and Apple-wood smoke flavors we added 1 tsp of Mesquite and Apple wood liquid smoke, my wife cooked it in the air-fryer, 6 minutes a side at 375 - 400, the fajitas were absolutely delicious, just wanted to say thanks for taking the time shooting the video and posting up the recipe, we are fans, thanks again from Canada!!!
You really hooking it up @ Kirby 👌I'm sure this marinade has great spice & flavor YUMMY! I like that you can just let it hang out overnight. Tfs. Kirby GOD BLESS YOU & the FAMILIA ❤Stay blessed & safe 🙇🏻♀️💖
Its my go to recipe Alicia, I used to sell tacos using this recipe. I sold out every night. Prayers to you and your families safety. Be careful my friend, these are some weird times right now.
@@CookingwithKirby Thank you very much Kirby. You & your Family too stay safe & GOD BLESS Y'ALL 💖🙇🏻♀️
Great video bro. Love me some pollo asado. Thanks for sharing
Thanks Carnal, stay safe brotha.
@@CookingwithKirby you to bro. Our county is on lockdown starting midnight
Damn dude! Fantastic.
Subscribed. My taco truck at work used cabbage instead of lettuce and it was bomb.
Yup, that is where I learned this recipe. I did catering for a couple of years, it was awesome working the street food scene.
Straight fire
Damn that looks great! 🤙🏻🤙🏻🤙🏻
Another thing you can do is shred the cabbage add cilantro and white onion and lime juice to wilt the cabbage a little but still crunchy that turns out really good
Oh Yea Subscribed lol 😂Trying This 2night🔥
Dude! Looks fantastic! Gonna give this a try.

Thank you!
i really need to get to know my grill better, its a whole other world for me. i made a version of this but chicken ended up to tough, but i was using chicken breast tenderloins
Hey Kirby!......those are some mouthwatering Tacos right there. I have to give that marinade a try it may not be the exact I may have to substitute a couple ingredients thanks for sharing my brother stay safe.
This is my go to recipe, but that spicy habanero and pineapple one is just as good. Thanks brotha!
delicious
Kirby those tacos look awesome ! 48 hours marinade ? You know that yardbird absorbed all those flavors ! A job well done right there !
Thanks Kent, I hope you and your family stay safe brotha. These are some crazy times.
May I ask what if there's no availability of lime & cilantro what can I use for other alternative
Dawg you killed it.
Thanks bro
How long can you keep the marinade mix for more cooking like 3 -4 days
Nice job! You have a great palette!
Buenas. Great video! When you hear up your tortilla do you use oil? I've seen some people use that. Off work today and I'm gonna try this recipe. Muchas Gracias and aprovecho! 👍
Man Kirby it's to early to be craving this 😂 anyways hope you and your family are staying safe
Really though, its almost 11am and im starving. We are good, germaphobes at the moment, but we got some ashy hands from all this hand sanitizer 😁. Thank you MzMartinez. I hope all is well and stay safe my friend.
@@CookingwithKirby we are all ashy as well and just home praying this is all over soon
You website is not coming up when I type it in my browser??
Wow Kirby, you hit that one out of the ballpark dude!! You're making me hungry... LoL. Even though I just ate lunch!! What you made in the video looked and sounds so delicious, if I lived close to you I would be over so much you would have to make me a relative... hehehe ;-D.
Thank you Timothy, this was my go to recipe when I sold tacos. If you lived close to me you would be overweight also lol. I hope you stay safe brotha, crazy times right now.
Damn, that carnita asada looks delicious brother... Nice color from the marinade 👍👍
Thanks brotha, its my go to recipe for pollo asado. Sorry for the late reply, started a new job. Still adjusting to the schedule. Hope all is well, and be safe out there.
Damn bro!! That looks hella bomb!! Definitely will try your recipes bro!! 👍
Let it marinade, I like to let it sit at least 24 hours. This is my go to recipe, I have different versions of this. Another one I add habanero to it. But its the same recipe with Habanero in it. Let me know what you think of it. Thank you Tanker, and be safe.
Sure will brotha!! You be safe as well!! Thanks for the tip!!
Seeds do not have any heat. It's the placenta (membrane) that holds them that has the spice. I really wish people would learn this.
But thank you for the recipe. It looks great. I will try it soon.
Actually its both
Kirby how do you make the habanero pineapple marinade?
Hey dude! Great video! What pepper would you recommend substituting for California Pods or the Other one? I’m in the countryside of Michigan from San Clemente CA, they don’t have many of those dried pepper options. What would you recommend to substitute for any of the dried pepper pods? Thanks for the video
Hey Jeremiah, I would order them online if you cant find it locally. I do notice the farther you get away from the south western region, it gets harder to find certain spices. If you got any latin stores locally, I would try that route. California and Guajillo peppers are not too spicy. I have used San Antonio chili's, seems similar to California in taste and heat. New Mexico peppers are hot, well the ones I get anyway. Also try looking for hatch chili pods. Those can range from mild to hot. You can use spicy chili pods, I personally make the marinade flavorful and let who is eating it put salsa on it to their liking. Let me know if you cant find some, if you cant, email me and ill send you some.
Hey, I'm really wanting to try this recipe but worried about the amount of acid/citrus. Would it not slightly cook the outside of the chicken? I marinated chicken for 2 days in a lemon marinade and the outside was white as it had slightly cooked. Thanks!
This looks great! You can keep your radishes though!
This is a great recipe! I love making this now. I will say that reverse sear doesn’t mean indirect cooking. It means searing in high heat AFTER you cook on lower temperature instead of BEFOREHAND.
Damn looks so fire
Another Great Video Brother
Thank you Mr FSU, stay safe brotha.
Great video can't wait to try it. I noticed your red salsa was more red then in the making if it? Did you do something different to it? thanks again.
No I didnt do anything than what I showed in the video. I just let it marinate for a bit. I like to let it sit over night, you will notice the flavor difference when you do.
I am curious if you have tried canning the sauce.
What kind of grill is that?
What type of grill is that?
From all cooking videos I seen on UA-cam your the only one who cooks food from the heart. ❤ pero can u do a video of you cooking barbacoa from the underground.
I appreciate that Angel, I plan to do that video. I just need to not killed by the wife for digging a whole in the backyard lol.
@@CookingwithKirby hey but ur cooking some delicious old fashioned barbacoa risk it bro. Your cooking looks good tbh
@@CookingwithKirby lol 😆😂
Wow! O como dicen en Mexico, Guau!
Guau, Guau! Gracias Amigo
Nice
Trying this today! What beat was playing I wanna spit a flow to it?🔥🔥🔥🔥🔥🔥🔥🔥🔥
awesome recipe.... tip.... plastic is not the best container to marinate in as it does break down some... go with glass. thanks for a great meal!
Im trying this weekend you know what u doing bro
I hope you enjoy it, the key to this marinade is to let it sit. I like to let it sit for 24 hours. When you do the flavor of the chicken is really nice.
Super
Is Pollo Asada the same as what they make at El Pollo Loco restaurants?
amazing
Thank you
