LOVE your channel! I grew up in Delaware (recently re-transplanted to SanD). Try Delaware-style: Melt the cheese on TOP of the meat. Press the bread on top the cheese (put a heavy weight on it). The cheese melts into the bread (evenly distributed). When removing from the grill, put a sheet of deli paper in your left hand. Then you can tightly wrap the sandwich before slicing. This makes a more compact, flavorful, less-messy bite. Just a thot!
I've worked in a *cheesesteak shop* before and some tips--use the roll as a backstop when you spatula the meat into it. Just put the lip of the roll on the griddle and slide into it. This makes it so much easier. Also, there is no need to put the provolone on the grill and then put the meat on top. Just put the slices of cheese directly on top of the meat. The rising heat and steam will melt the cheese in ten seconds. After the cheese is melted slide your spatula under the cheese and meat and you can place the entire thing on a roll--the cheese will make the meat stay together. Lastly, make cheesesteaks with white american cheese, it's really the traditional way.
The next time i have guests over , I'm going to give each of them their own paper towel roll. Yep.. Just wipe your roll across your mouth for the authentic Sam the cooking guy experience.

I did this cook yesterday only used marble rye instead. Could not find Italian bread acceptable enough to use but turned out fabulous also used red and yellow bell peppers pinch of salt and pepper as well

I was proud that Sam came to the right conclusion on this one. People need to stop judging something before they've tasted it (something I think we're all guilty of at times).

But in recent years they've included it as an optional thing like a relish bar type of addon. I would never eat mine with peppers or mushrooms (despite the fact that I love mushrooms) because it doesn't really need them.
Growing up in Philly my entire life, I’m going to say there is no one cheese that is the best. It’s situational to level of hangover you have or if your guilty pleasure meter is off the charts. Great hangover/guilty pleasure cheesesteak is whiz wit. Great all around cheesesteak in my opinion has provolone, fried onions, roasted red peppers, hot peppers and a little mayo(optional). Most of the time the people who are defensive when it comes the best cheesesteak spot in the city are the same people that cry for a month when the Eagles drop the football. Don’t get me wrong there are definitely spots that are better than others and some that are worth avoiding. Moral is to find a spot that cooks the meat that flatters your tastebuds and find a place that uses quality rolls. #JeetYet?

But I will say that as someone who grew up just outside of Philly, lived there for many years, and also lived in San Diego for four years in between, the west coast usually fucks it up. Concord Pike Steak Shop had some really good cheesesteaks and they were freaking huge. We used to get them when we were on our way into delawhere or when we were at house parties in the area. There was also a beer store right next door so you know one stop shopping.

I made a cheesesteak sandwich this afternoon. I ended up shaving down a boneless ribeye that I had, used a soft sub roll that I toasted, sauteed some onions, and slapped some cheese whiz on it. It came out great.

This is the way. There's a handful of cheesesteak places where I've ordered that in front of the owners and they just look at me in abject horror when I get both.
Provolone is the way to go. When you season the meat, towards the ed of it's cook time, also add in a dash or two of garlic powder. This meat and onion version is a basic cheesesteak...then add green pepper to the grill and it's a general cheesesteak....than also add sliced mushrooms to the grill and it's a Real Cheesesteak!! I've made them my whole life and rotate the meat selection using mostly ribeyes, but I also like using sirloins, london broils, and eye of round.

I went to a place in Burlington VT when my daughter was shopping for a college that made a steak sandwich on a toasted garlic aioli bun, hanger streak, pickled onions, roasted tomatoes, blue cheese and arugula that blew my mind. I have been recreating in for my daughter and her friends for a few years. You might want to give it a try. It is always a hit and a nice spin on steak and cheese.
I actually decided not to choose... and I bumped it up a notch in the process. I use provolone on the bread. But just before my shaved ribeye is done cooking, I mix in a brand name queso cheese dip. The added spice does wonders for flavor.

In California we have a Cheesesteak chain and even though it's a chain in Cali, they bring in Amoroso's. Couldn't imagine them on anything else. No roll you can buy at a grocery store comes close.

the one time i went to philly both tonys and ginos had closed for the night so we went to this bar that was a local favorite for late night cheese steaks and i got mine with both provalone and wiz and never regretted it they use the wiz like mayo to keep the bread from going soggy and then melted the provolone on the steak itself lol truely the best ive ever had

@@ghostrider2214 I think the big difference is that an italian beef is like roast beef that cooks/sits in an Au Jus sauce instead of grilled on a flat top so you get that really salty, french onion style au jus flavor from the beef. Almost like a french dip.
Italian beef is the most overrated sandwich. I went to Al's and the sandwich was a sodium bomb. Who wants a soggy sandwich? Give the Au Jus sauce on the side. A much better sandwich is a smoked tri-tip sandwich with BBQ sauce.

I’ve tried these at various places throughout Colorado and California. It’s taken a very long time to figure it out on my own with zero access to PA locals who I’m sure would steer me there quicker. Two places stand out to me: DeliZone in Boulder, CO, and one of several concessions at Bronco Stadium. Both chop and steam their browned beef and both use an off white cheese sauce which I think may be a combination of white American and provolone, and both are well incorporated into a singular goodness. Parchment paper is a must.

I was in Philly about 20 yrs ago for work and got a cheesesteak from this place that was in someone's house. Like they converted the downstairs into a lunch counter. It was near the football stadium. Best damn cheesesteak I've ever had.

Provolone is the way to go. When you season the meat, towards the ed of it's cook time, also add in a dash or two of garlic powder. This meat and onion version is a basic cheesesteak...then add green pepper to the grill and it's a general cheesesteak....than also add sliced mushrooms to the grill and it's a Real Cheesesteak!! I've made them my whole life and rotate the meat selection using mostly ribeyes, but I also like using sirloins, london broils, and eye of round.

I went to a place in Burlington VT when my daughter was shopping for a college that made a steak sandwich on a toasted garlic aioli bun, hanger streak, pickled onions, roasted tomatoes, blue cheese and arugula that blew my mind. I have been recreating in for my daughter and her friends for a few years. You might want to give it a try. It is always a hit and a nice spin on steak and cheese.
I actually decided not to choose... and I bumped it up a notch in the process. I use provolone on the bread. But just before my shaved ribeye is done cooking, I mix in a brand name queso cheese dip. The added spice does wonders for flavor.

Jeremy Laing I used to work at a cheesesteak and pizza spot and once I tried cheese wiz, I always did both. You have to have the provolone but the cheese wiz adds that special touch. Try it.

I do this with a mix of gruyere and cheddar. Not original, but effin delicious!

Oh no! Provolone all the way! But I can’t even begin to argue against Amoroso’s Rolls. Those just seal the deal. Hell, almost all sandwiches should be between those! Wish i could get a meatball sandwich on that. It would be heaven!
In California we have a Cheesesteak chain and even though it's a chain in Cali, they bring in Amoroso's. Couldn't imagine them on anything else. No roll you can buy at a grocery store comes close.

the one time i went to philly both tonys and ginos had closed for the night so we went to this bar that was a local favorite for late night cheese steaks and i got mine with both provalone and wiz and never regretted it they use the wiz like mayo to keep the bread from going soggy and then melted the provolone on the steak itself lol truely the best ive ever had

@@ghostrider2214 I think the big difference is that an italian beef is like roast beef that cooks/sits in an Au Jus sauce instead of grilled on a flat top so you get that really salty, french onion style au jus flavor from the beef. Almost like a french dip.
Italian beef is the most overrated sandwich. I went to Al's and the sandwich was a sodium bomb. Who wants a soggy sandwich? Give the Au Jus sauce on the side. A much better sandwich is a smoked tri-tip sandwich with BBQ sauce.

I’ve tried these at various places throughout Colorado and California. It’s taken a very long time to figure it out on my own with zero access to PA locals who I’m sure would steer me there quicker. Two places stand out to me: DeliZone in Boulder, CO, and one of several concessions at Bronco Stadium. Both chop and steam their browned beef and both use an off white cheese sauce which I think may be a combination of white American and provolone, and both are well incorporated into a singular goodness. Parchment paper is a must.
I started using Avo Oil because of you Sam. Was using grapeseed. And just happened to buy Chosen when I went.

I was in Philly about 20 yrs ago for work and got a cheesesteak from this place that was in someone's house. Like they converted the downstairs into a lunch counter. It was near the football stadium. Best damn cheesesteak I've ever had.
