I can't look at Sadie without seeing Jordan. Talk about a mini-me. So smart that you're leaving her with Adriana a couple of hours a day, not only to free your day up a bit to get stuff done, but it will help her learn Spanish so quickly. And I'm in awe of how you guys are juggling so much now; the constant projects on the land, expanding your coffee business abroad, all while raising your daughter. Very inspiring.

Pro Tip: Build a sand dome as a mold for the bricks and then stack/build the bricks around the sand 'mold'. Once the cement dries, you can scoop out the sand from the door.
There’s a thousand ways to do things . I’m paying attention myself so when I make mine hopefully I do it one of the best ways
Good tip! That's the way that i.plan to build mine with a dirt mold and the scoop it out once it's completed. I've done a few other projects this way...like molding my elephant leaves to make the concrete waterfall! It worked perfectly. 👍🏼
This is correct. You make a dome out of sand and stack around and over the top much like making a igloo. Its alot of work and time but worth the end results. Good luck

Hi from Israel, Many of the buildings built hundreds of years ago had dome ceilings/roofs. This was done by filling the structure with sand and a dome shape on top. The stone bricks were laid on the sand until the main key stone at the very top was in place. Then the sand was dug out, and bingo- dome ceiling. May also work for a pizza oven.😀

I look at little Sadie and all I think is robust. That little girl is just thriving. I’d highly recommend a Baltic amber teething necklace for her. They’re safe and work amazingly well. Keep up the amazing work.
When your dome build becomes to rounded to lay bricks then fill the inside with damp, packed paper. When the paper reaches a height that is about 12 inches from the area you want to lay more bricks then start packing in sand. Mound your sand in a dome shape. Make sure the dome is packed firm enough to hold the domed brick top. Allow your dome to completely dry and start removing the paper. The paper is easier to remove than a huge mound of sand. I'm sure you already know that you have to cure out your oven. Small burns, maintain low temp for recommended time. It would also be handy to have a temp gun, so you will know when your oven reaches desired temp. I'm not trying to tell you what to do, this is what worked for me.

One of the indicators used for introversion is needing to be away from people to recharge. Likewise, one of the indicators for extroversion is needing to be around other people to recharge. Try using a pippinng ("A cake decorating style bag") to fill in the joints for your Pizza Oven.
It will save you major time so your refractory cement wont dry out.

I noticed Sadie’s car seat buckle is a bit lower than the recommended level - up at the armpit level in case of crash the rib cage would take the brunt of the force vs the abdomen. I admire your dedication to coffee! I lived in Guatemala for 3+yrs on and off. I found the local coffee in Lake Atitlan was my favorite. Now I am in Costa Oaxaca and the local coffee from the mts is pretty good too. I am by No means qualified to select coffee except for me. I am so impressed with the two of you and how you have created a great team And opening a roastery in the US.
Really, everything you do and are doing has impressed me.

Use a wet brush on the brick when you are done. Clean them off and the water makes the grout nice and even. Try it

You guys can use 8 cartoon board cut in half circle to make a doom with 16 pages of 1/4 circles as support mounding. Then put on bricks and burn the card board inside. I saw that in Japanese tv special in Germany
Jordan, it's healthy for everyone to get a consistent amount solitude. I think it's great that Sundays give that to you. And yes, it gives you a chance to go inward and/or not be distracted by all the chatter of others, but it surely doesn't make you an introvert. You definitely come off as an extrovert to me. :)

Scribes makes marking cuts easy sometimes . Not sure what your mortar is , but some firebrick mortar is air setting and some needs heat to set . Especially on first heat go very slow . Then any moisture will go away slow . Heat to fast and steam can blow out many mortar joints . When we bricked furnaces we always cleaned the mortar off the bricks , so the mortar would not spaw - chip the brick . But other than a few restraint pizza ovens most of our work was in steel mills , chemical tanks , Aluminum furnaces , led smelting and other industrial applications. . Some of the domes in chlorine tanks are like 30 feet across . I find the pizza oven vids interesting , and interesting the difference in materials from industrial here to what you are doing there . It is looking good
