The only thing I can think of is he wants to elevate the Michelin chefs to perfect execution so that they will win one. It’s the best he can do in the short amount of time he has with them. Everyone wants a piece of his time

Milly took the budget and tried to skim on the ingredients. Every good dish today had one expensive ingredient that you uplift with technique. No matter how much you uplift chicken meatballs, its still chicken meatballs... The perceived value for the customer is just not there.
Realistically Dana’s dish should’ve been rated lower and nick didn’t deserve $23 from Ramsey. But the producers can’t have blue winning another challenge
