Bread Pudding is an old fashioned dessert that had its humble beginnings in 13th century England. It was first known as a "poor man's pudding" as it was made from stale leftover bread that was simply moistened in water, to which a little sugar, spices and other ingredients were added.

    I remember watching this channel when I was around twelve or thirteen all the time. I'm twenty-five, have my first real apartment with my partner and some stale bread I want to make into bread pudding. When looking for recipes I knew at the bottom of my heart that I was looking for one in particular and then I remembered that I only learned about bread pudding because of you! So I went searching and found this video again. Can't wait to give it a go later today. :)

    I made this today! Soaked them overnight and topped with crumble (1/2 cup flour, 1/2 cup brown sugar, 1 stick cold diced butter and 2 tsp cinnamon). Yuuum! Baked without the water bath at 350F for 50 minutes and it turned out well. Thanks for the recipe! :)

    I just made this bread pudding and it came out fantastic. So creamy and delicious. I don’t eat dairy so I used almond milk and plant based butter. I think it’s the best bread pudding I’ve ever eaten. Thank you for the recipe!!

    I just tried this recipe today, and it is really yummy. I love how simple it is, but tastes so great. A real comfort food. I gave half of it to my friends, and they wolfed it down. Your video is great at explaining and demonstrating the whole process as well. Thank you for posting.

    UPDATE: OMG this bread pudding is to die for! I added slices of peaches, raisins, and walnut all over and I used all heavy cream he, he, he, I also added 2 extra eggs because I love my custard. I swapped 2 tablespoons of heavy cream to the liquid from the peaches, yum it was soooo good! I've also been looking for a good Bread Pudding recipe for a long time and now my search is over! I highly recommend it!

    Your recipe is similar to my mothers but she scalded the milk and added a pinch of salt. Love how you used a water bath. Now I'm starving for bread pudding!

    I made bread and butter pudding and what can i say, everyone in my family enjoyed it sooooo much. 😋😋😋😋The extra flavour i added was grated sprinkling of nutmeg and it took to another level. 🤗 My son says mum, this pudding is even better than Mary Berry’s, a famous British food writer and television presenter.🥰

    I mix it all together in one huge bowl, and then pour it into the baking dish...much easier, and let it stand about 15-20 minutes, then bake it. That's the way my mother did. Oh yes...Nutmeg as well as cinnamon. Your's looked wonderfully good.

    I made this and left it to cool in the oven and when I came back into the kitchen to check on it, it was gone. My brother who is on a wresting team ate the entire thing. Later he even asked me how I made it. haha

    hi again Stef, this was delicious, absolutely!! i did soak the raisin in warm water, plumping them up, 2 apples, and the butter did harden a bit upon addition, but baked fine! i did put a pan of water in a lowere shelf! after 60 min it still wasn't done, so raised heat to 350 and then took it out! there was maybe too much fruit, but it was excellent; just warmed a slice w/maple syrup for a very late brunch, and even better!! the pain in my arm/shoulder got much worse, guess not thinking this was like baking a cake was wrong on my part!!! wanted you to know that this, the streusal banana, the chocolate banana have been some of my biggest hits, all due to YOU!!!

    they serve it daily at the hotel i stayed in last week and now i'm back home figuring out how to make it myself. totally love it with some vanilla & chocolate sauce. yumm! LOL💓

    I have an extra loaf of cinnamon-raisin babka left over from Thanksgiving and--although I've never made or eaten bread pudding in my life the idea popped into my head that bread pudding might be a good way to use it-and began searching for a recipe when I found yours. The recipe is convenient because it works well with my babka which already contains raisins, cinnamon, and even orange zest. Ha. Ha. Thank you for this recipe; I'm sure it will be good because your instructions indicate the kind of culinary details that should ensure that fact!!

    Well - different country, different bread, is it not? I made it with real brown bread (rye and spelt; I am German) and I even left the dark crust on it. Of course I had to soak it for about 40 min. It was delicious! I loved the crunchy bits on top down to the rich and creamy custard. But my favourite taste was this teeny-weeny lemonzest in it. That has made the dish very special. Thank you for the demonstration!

    Immi Franklin that suggestion of sprinkling brown sugar on top before baking is great and I love cinnamon, so might even mix some in with the sugar!

    It sounds like the custard either curdled or the bread pudding could have been over baked. Curdling is when the custard gets too hot which can happen if the water in the water bath is too hot (boiling). Curdling means the milk and egg (custard) separate into its solid and liquid components. Usually the water bath prevents this from happening, but next time check periodically and make sure the water is not boiling. If it is turn the oven down about 25 degrees F.

    I made it last night for New Year Eve but it didn't last. So today I will be making another batch and put a tag with a note "don't touch it" :)). Using the recipe and direction precisely, cooked it in water bath and less than 1 hour it was done with custard cooked evently. Thanks for always providing detailed directions in your recipe. Happy New Year.

    This is the first bread pudding recipe that did not seem overly fattening, it was simple, I like all the ingredients, and it looked great when it came out of the oven. I'm going to try this one.

      a pudding is meant to have fat in it, so its difficult to find low fat versions

      Matthew Seccombe Just because something is "meant" to have fat in it, doesn't mean it should have excessive fat. But, a lot of recipes have excessive fat. I never look for "low fat" desserts, just one that doesn't pour on the fat when it is not necessary for the dish to taste good. She did a nice job keeping things reasonable.

You simply stated the obvious, that a dessert is "meant" to have fat in it. I never made mention of looking for a fatless bread pudding. lol There was no argument here, because there is no need to argue with someone who made no real point at all. What I said is that there does not need to be excessive fat in a dessert, and she achieved that. Plain and simple. You stating something about "low fat," when I never said I was looking for "low fat" didn't make any sense at all. I simply stated that she did not put more fat than was necessary for a good result. So, you still have no point. And, you are the one replying to a year old video comment, when you didn't expect me to respond. Now that I responded, just deal with it. Don't start an internet conversation if you are going to end up butt hurt.

    today i made this pudding and it was awesome. i heat the oven to 160 degrees and steam 40 degrees. i did not insert my baking pan inside hot water. thanks for the demonstration

    HI Stef, just put my 13x9 pan in my oven, set at 325, as bakers said 350, you said 300, so tried in the middle! i used a beautiful whole Challah bread, bought esp for this recipe! i'm not a big bread eater, but my mom baked challah every Fri for our Sabbath, and our treat was a thick slice with pb!! i used 1c of raisins plus some craisons and 2 apples, so its really full of fruit!!
    otherwise following your recipe exactly, BUT DIDNT USE A WATER BATH!!! that was too scary, and again, most folks didn't use that!! will invite neighbors for a big taste as i barely taste my baking, just enjoy it immensely!! thx again for your sweetness:): kelli

    im british and i have never seen anyone use a boil bath method for cooking bread pudding before though this might be a regional method ? also iv always sprinkled some brown sugar on top of the pudding before i put it in the oven

    I'll try to do the water bath method. Never did that before and i noticed unpleasant smell & taste of egg in my bread pudding, similar when you make a custard cream and the egg is curdling. I've been very sensitive with that kind of smell. Thank you for your advice mam..

    Love the baine marie method, though the baking time is longer it will ensure that the top will not quickly turn brown while the insides are cooked to set enough

    Brown sugar instead of white would be delicious. A 1/4 tsp of nutmeg is a nice alternative to cinnamon. Low on butter or cream? Add extra yolks for a rich custard.

    Deevianee Chaumun I've made microwave bread pudding many times. It is quick and easy. Very similar similar recipe, just you cook it in the microwave. I can't get to the recipe link now but will try to later. This custard looks very delicious; will use next time I'm making my bread pudding.

    I use allot less bread because I like the custard more but that is a personal thing.
    I always heard to put it in a water bath, and I did at first until I forgot to one day, and it was just fine, so I don't do that step anymore and it comes out great. I also drizzle it fresh after backing with Amaretto, or Caribbean Rum.

    There are many ways of making Bread Pudding, just depends on what you grew up with. I personally like to toast the bread lightly & use more Cinnamon. This may not be Bread Pudding you're used to, doesn't mean it's not to someone else.

      I like the crust you get when a water bath is NOT used. I have never burned a custard when baking with out water bath.

    weird i tried doing this but my custard turned brown after putting the vanilla and cinnamon.. idk what happened.. is that suppose to do that?

      Kramseyer Yes, they can color the custard.

    I tried bread pudding once and it was made pretty similar but without the water bath. However, it came out too soft or mushy, although it was cooked through. I have loved having this dessert at fine dining restaurants and really would like to get it right at home. Any suggestions?

    Could it be the type of bread you used. Some types of bread will break down very fast when soaked in a liquid.

    Stephanie, I love your recipes (and videos). Wondering about your stand mixer! Is it a Kenwood? Can you please share the size! My Kitchenaid is giving me problem. I am ready to buy one like yours.

      I use a kenwood titanium chef 5 quart mixer.

    A water bath prevents the eggs in the custard from curdling. I've never actually tried baking the bread pudding without the water bath.
