How to cook smoked Kangaroo low and slow

  • Smoked kangaroo on Traeger smoker, half wrapped in bacon and half smoked then wrapped in flavour. So easy to cook and will give you the best Kangaroo EVER. Full of flavour and tenderness. It’s worth a crack.

    Hello, just curious, is kangroo farm raised? If so, is there much difference in flavor between farm raised and wild (assuming there is a hunting season for kangaroo)? I enjoyed the video. I'm from the States, I love to grill and barbeque and also enjoy seeing what others are doing around the globe.

      Hi thanks for watching. Yes there’s farms, plenty of kangaroos in Australia. I can’t say I’ve eaten wild fresh kangaroo but I know people who have, also people who catch wild deer and advise the meat is so much tastier and fresher. I’m not the biggest kangaroo meat fan if I am honest, it’s a very different taste on its own which is why I prefer to combine with other flavours.

      Hey Dave I used to think this too but I learnt only recently that all kangaroo produced in Australia is wild caught.
      Probably a good thing in my opinion.

      Hi thanks for the comment, not sure I fully understand your question though sorry. Smoker was on 93 degrees Celsius which is 200 degrees Farenheit initially to get smoke throughout the meat, then increased to 107C which 225F if that's what you're asking.

      Depends how much you like rosemary. TBH in this video I used dry rosemary, it was an early video and cook of mine. These days when I cook this I use fresh rosemary and it makes a huge difference. Thanks for the feedback and for watching.
