I eat roo a fair bit. My favourite way to cook it is just with an SPG rub. Slow cooked with charcoal at 100 degrees Celsius until it has an internal temp of 60C. I don't use any smoke wood at all.
Love your channel and your videos, but the freezer clip stole the show for me this time. Lost a freezer full of meat just a month ago and have been wanting to come up with something to avoid that happening again. Thx Todd!
Wait, what Dalstrong Santoku was that? Great recipe, though I'm not sure I would replicate it. I'd probably just do a SP reverse sear and a buttersauce perhaps.

I'd be too scared of all the parasites to eat this as kangaroos are hosts for nematodes, like Globocephaloides trifidospicularis.
Unless you are eating the intestines, can’t see a problem. Intestinal worms don’t transfer to the meat.
