    There was once a Butcher here in Ireland in the early 2000's that specialized in hard to find meat like Kangaroo, Alligator and Ostrich so I did have the pleasure of trying Kangaroo. Very nice if you ask me - even though I'm sure I overcooked it at the time.

    I marinate my roo in teriyaki then sear it in a hot pan for 2 min on each side, rest for 5-10 min, that give it another 30 secs on each side. Comes out perfect. Best thing I ever made. Honestly, after you've had roo, you'll never want beef again.

    Thanks so much for promoting Kangaroo - for Australia it is such a sustainable source of protein that is also easy on the environment. Love to eat Roo by the way, though haven't tried the tartare, however you had my salivary juices flowing with this one 😊😊

    In 2006 i worked for a cladding company and we stayed the week over in Zandvoort(Netherlands) And there was an Australian cafe/diner called the Boomerang. I had kangaroo steak and i have to admit that i was delicious. After one time eating there, i made this my favorite restaurant. 4 years later i was on a holiday in Zandvoort with my 12 year old daughter. And the first diner we had was Australian food in that same restaurant. And she liked it also, so it was not just me.

    Hey chef, here in a restaurant in Spain they serve the steak tar tar with a fried egg sauce and it's amazing. What they do is fry an egg in a lot of oil (like Asians do) and put in a blender with a bit of milk or cream. Highly recommend you to try it out!

Nice when done correctly. What about trying some venison? That would probably resonate with your American fans. Really enjoying your content 👍

      You MIGHT want to CHECK your facts before spouting off nonsense love!
      PS, there's LOTS of venison farms all over Australia!

    When people ask me my favourite cuisine, they are always either very surprised or very affronted that I say I love Aussie Cuisine aka bush tukka. Years ago I visited Fraser Island, now known as K'gari, and the chefs there offered a 'bush tukka' course. I died and went to heaven!!! The wonder and beauty of this food is that it doesn't travel outside of Oz, and personally speaking, I think that is how it should be!!! Simply because it makes me want to keep travelling back, half way across the world, to indulge in the finest foods the planet has to offer! Combine that with Emu, Kangaroo, Crocodile and all your fish that we don't get this side of the Atlantic....it's simply heaven on earth! Please don't ever export your food. Make us foodies come to you to get it! It tastes so much better when we do. Right, change of subject....love your channel, love you Andy and love Katelyn Babe! Mitch and Caleb too!     my daughter lives in Tassie, and she regularly buys wallaby to cook. I was apprehensive about trying it, but I made a few steak sandwiches, and they were delicious. Great video. Looks so yum.

    I was lucky enough to have Kangaroo steak burgers years ago, we hardly see Kangaroo in the UK and was a nice treat. Wish it was more available here. Great job!

    I loved the times I ate Kangaroo! When I did it was in Québec, Canada! In Fondu or burger form is the ways I've tried. I so want to try this!!

    When my dad was still here, he cooked it regularly. He & I, became expert @ cooking 'roo steak.
    I always tell people to cook it LIKE calamari! FLASH cook it or stew it, anything else yields shoe leather!

    Another great Australian meat that doesnt get talked about enough is Emu meat. Ive had emu sausages before and they are really quite tasty. It was a shock initially discovering it tasted more like beef considering its a bird but delicious nonetheless. Would be interesting to see you do a recipe with some.

      I wonder how much of that is due to the size of the animal. Larger mass & faster movement means larger muscles, which means it needs more blood & more oxygen.

    Great stuff. I would highly recommend making a website to post your recipes and expand your brand. I hate reading recipes on a UA-cam description cause it's very awkward on a phone. Would recommend this and you'd be doing me and so many people who love your content a huge favor

      In Australia, it is common enough to have a section in the supermarkets. Not a big section, but still. Keep in mind, the big 'roos like Eastern Greys are kinda a farmland pest, getting into crop fields. Less so on cattle farms.

    One day I gotta try tartar with chips, I think I just got a bad wrap of it when they used it for a gag in Mr. Bean and well I also never tried raw red meat before... maybe its more common to be put off by it but I wouldn't know unless I try it, plus the seasonings make it look worth it

    Love Kangaroo and have been luckily enough over many years of working in central Australia to have both hunted and cooked with Traditional men from a few different language groups. Have shared raw kangaroo with a few people over the years BUT it's important that it is always served with a warning. Kangaroo being wild harvested can have toxoplasmosis!

    Hell yea, thank you for shining light on the humble kangaroo!!
    So many benefits to eating Kangaroo, not the least of which being since European's cleared land in Australia for farming & kangaroo's perfect habitat is a luscious plain of anything vegetation like, we went from a population of 3 million in 1800 to 50 million today so it's a sustainable option for high quality, high iron, super low fat, absolutely delicious and versatile meat.
    Slow cook it (especially the tails) for 5 hours, very rewarding. Basically Australian Osso Bucco

    man, had my first experience whit kangaroo today. Gotta say, hella good eats ! Lean yet moist, good barn yard musk on it. Loved it. If to compare to something, Id say horse is close to the same.

    I am from Germany and we have a nice Australian Restaurant near where i live that serves Kangaroo, Ostrich, Crocodile steak and also Shark! Ostrich and Crocodile i preferred over Kangaroo tho personally!
    Also i hope you get the Uncle Title soon! I love your cooking so much, like i can't even stop to express how many times i look up your channel to get cooking ideas....you are the best chef on youtube for me and i hope you keep going for a very very long time! Really love everything you do!

    Have you tried buffalo? I used to be a statiohnd on a buffalo station up around Arnhem Land in the NT and we'd have buff for every meal. Lean and gamey, like roo, but beefier. Sunday evenings were great. We'd have Barbies, with buff ribs (huge, like something from the Flintstones) and freshly caught barramundi and magpie goose. The goose was pretty tough, but incredibly tasty. Wild food has that extra kick to it.

    Love this. The only time I squirmed was when you called crisps chips!!!. Great video and we must stop being so particular about the meat we eat. In France, horse was common place. There are more roo than humans in australia and it makes sense to eat them. Though, for Christmas I might opt for anything but a leg!!! 😀

    I personally love raw yolk and just raw eggs in general. I fully understand people's hesitation towards it, but I was fortunate enough to grow up in a household where that was the norm. The softer and runnier the eggs the better in my opinion.

    I’d love to try kangaroo. I’ve eaten a lot of wild meats from my area in central IL. Venison, rabbit, squirrel, pheasant, quail, and even raccoon.

    I have in the uk.. it's delicious. But better eating kangaroo than fighting Emus . They kicked your asses 🤣

      @@dazaspc If the Emus and the kangeroos got together, trained a few spiders and snakes up, humanity in Australia would be done .

      @@dazaspc oh I remember watching a programme where they autopsied a dead one . They compared it's skeleton to a raptor type dinosaur.....and it was far too similar.

    I haven't had the chance to try steak tartare, but I'd love to, and especially using kangaroo meat, that looks incredible. Chef, I love kangaroo meat and don't eat enough of it,as my wife is not a fan of it. It's a great video Chef Andy

    One of the most interesting welcoming dishes I've been served was a curried kangaroo tartar. It was blummin delicious. That paired with a medium body red was divine

    Years ago my BIL gave us some wallaby patties. As they were quite 'gamie' he added to the mince diced bacon. The bacon added much needed fat and it worked a treat and was delicious.
