There was once a Butcher here in Ireland in the early 2000's that specialized in hard to find meat like Kangaroo, Alligator and Ostrich so I did have the pleasure of trying Kangaroo. Very nice if you ask me - even though I'm sure I overcooked it at the time.

I marinate my roo in teriyaki then sear it in a hot pan for 2 min on each side, rest for 5-10 min, that give it another 30 secs on each side. Comes out perfect. Best thing I ever made. Honestly, after you've had roo, you'll never want beef again.

In 2006 i worked for a cladding company and we stayed the week over in Zandvoort(Netherlands) And there was an Australian cafe/diner called the Boomerang. I had kangaroo steak and i have to admit that i was delicious. After one time eating there, i made this my favorite restaurant. 4 years later i was on a holiday in Zandvoort with my 12 year old daughter. And the first diner we had was Australian food in that same restaurant. And she liked it also, so it was not just me.
I was lucky enough to have Kangaroo steak burgers years ago, we hardly see Kangaroo in the UK and was a nice treat. Wish it was more available here. Great job!

Hey chef, here in a restaurant in Spain they serve the steak tar tar with a fried egg sauce and it's amazing. What they do is fry an egg in a lot of oil (like Asians do) and put in a blender with a bit of milk or cream. Highly recommend you to try it out!
my daughter lives in Tassie, and she regularly buys wallaby to cook. I was apprehensive about trying it, but I made a few steak sandwiches, and they were delicious. Great video. Looks so yum.

Years ago I visited Fraser Island, now known as K'gari, and the chefs there offered a 'bush tukka' course. I died and went to heaven!!! The wonder and beauty of this food is that it doesn't travel outside of Oz, and personally speaking, I think that is how it should be!!! Simply because it makes me want to keep travelling back, half way across the world, to indulge in the finest foods the planet has to offer! Combine that with Emu, Kangaroo, Crocodile and all your fish that we don't get this side of the Atlantic....it's simply heaven on earth! Please don't ever export your food. That 'roo was PERFECT Andy! When my dad was still here, he cooked it regularly. He & I, became expert @ cooking 'roo steak. I always tell people to cook it LIKE calamari! FLASH cook it or stew it, anything else yields shoe leather!
We also eat our national animal, the Springbok, in South Africa! P.S. I am still waiting for you to cook a proper South African Babotie with Yellow Rice, chef!

One of the most interesting welcoming dishes I've been served was a curried kangaroo tartar. It was blummin delicious. That paired with a medium body red was divine

Years ago my BIL gave us some wallaby patties. As they were quite 'gamie' he added to the mince diced bacon. The bacon added much needed fat and it worked a treat and was delicious.

Have you tried buffalo? I used to be a statiohnd on a buffalo station up around Arnhem Land in the NT and we'd have buff for every meal. Lean and gamey, like roo, but beefier. Sunday evenings were great. We'd have Barbies, with buff ribs (huge, like something from the Flintstones) and freshly caught barramundi and magpie goose. The goose was pretty tough, but incredibly tasty. Wild food has that extra kick to it.
Interesting way of doing it my dad always cut super thin steaks and cooked it on a super hot pan very quickly till rare. Almost black on the outside. Loved it.

Love Kangaroo and have been luckily enough over many years of working in central Australia to have both hunted and cooked with Traditional men from a few different language groups. Have shared raw kangaroo with a few people over the years BUT it's important that it is always served with a warning. Kangaroo being wild harvested can have toxoplasmosis!
One day I gotta try tartar with chips, I think I just got a bad wrap of it when they used it for a gag in Mr. Bean and well I also never tried raw red meat before... maybe its more common to be put off by it but I wouldn't know unless I try it, plus the seasonings make it look worth it

So many benefits to eating Kangaroo, not the least of which being since European's cleared land in Australia for farming & kangaroo's perfect habitat is a luscious plain of anything vegetation like, we went from a population of 3 million in 1800 to 50 million today so it's a sustainable option for high quality, high iron, super low fat, absolutely delicious and versatile meat. Slow cook it (especially the tails) for 5 hours, very rewarding. Basically Australian Osso Bucco
