How to Make Peach Scrap Jelly

    Peach Scrap Jelly Recipe
    To make the juice:
    5-7 quarts of peach peels and pits
    Cover the scraps with water. Boil ten minutes. Remove from heat and let the scraps sit at least 8 hours- overnight. Strain the juice from the scraps.
    To make the jelly:
    Add four cups of juice, 1 box of Sure-jell powdered pectin, and 1 teaspoon of butter to a large kettle. Bring this mixture to a rolling boil. Add 5-1/2 cups of sugar at once. Stir continuously and bring back to a rolling boil. Once at a rolling boil, boil exactly one minute. Remove the jelly from heat, skim foam, and fill jars to 1/2 inch headspace. Wipe the rims of the jars and seal with a lid and ring. Place the jars in the canner and process for 10 minutes.

    Add about half cup of your sugar w pectin been doing it that way 40 yrs works great

      Wow! That is awesome! You have been busy! I have made anything with my peels other than jelly, but you could probably make syrup or hard candy/suckers. Don't have recipes for those, though. Congratulations on your hard work today!

      You could make peach pepper jelly with them. I have 10 half pints in the canner right now. 😋

      @@lisalisa3652 , you could. I like to make my peach pepper jelly with actual peach flesh, though. I have got that on my list to get done this summer. I've got to make a triple batch. My guys fly through it.

    I would like to make a SMALL BATCH of this recipe (only have 2 quarts of peels and pits). Do you have a recipe I could use?

      I think you can make this jelly with that amount of peels and pits. I would just add five to six cups of water. Let it sit a long while after boiling to become well-concentratred. When you are ready, strain the liquid well to get 4 cups of juice with which to make the jelly. 😊

      @@lorraineingram6779 , thanks for stopping by and watching. I didn't measure the water. I just used enough to cover the scraps. I would say to use at least 5-6 cups, though. If when you measure out your juice you don't have quite enough to make the jelly, you can add a little water to your strained juice to make up the difference. I hope that helps. 🥰

    I have some peaches I've canned about 2 years ago, can I make them into jam?

      Hmmm... I've never tried that. I say there's only one way to find out! 🥰 As far as safety, I don't think it would be an issue, but I don't know about the looks/quality of the jam. They peaches could turn dark. I'd love to hear your results if you try it! 💜

    Can you do the same with apple peels and cores?? Make apple jelly?

      You definitely can! You'll need the peels and core from 15-20 apples. Boil them for 20-30 minutes in 7 cups of water. Strain the liquid well. Add enough water to equal 7 cups if needed. Whisk a box of regular pectin and bring to a boil. Add 9 cups of sugar all at once. Bring back to a rapid boil and boil for 1 minute. Laddle into jars to 1/4 inch headspace. Process jars for 10 minutes. 🥰
