BETH'S QUICK & EASY CHICKEN LETTUCE WRAPS
Serves 2-3
INGREDIENTS
1 lb (450 g) of ground chicken
1 cup (150 g) of mushrooms, diced
1 tbsp (15 ml) unflavored oil (grapeseed oil, canola oil)
2 garlic cloves, minced
2 tsp ginger, minced
6 tbsp (90 ml) soy sauce
6 tbsp (90 ml) rice wine vinegar
2 tbsp (30 ml) sweet chili paste
a sprinkle of red pepper flakes
½ tsp (2.5 ml) spicy Chinese mustard (or Dijon Mustard)
1 cup (150 g) water chestnuts, diced
2 scallions, diced
1 head iceberg lettuce or Butterleaf Lettuce
METHOD:
Heat the unflavored oil in a pan and sauté mushrooms until they release their juices. Add chicken, sautee until cooked through.
Meanwhile you can mix up the sauce. Add garlic, ginger, soy, rice wine vinegar, sweet chili paste, red pepper flakes, spicy mustard.
Pour sauce over the chicken mixture and keep warm on low heat. Meanwhile roughly chop the water chestnuts, and scallions and add to the pan. Toss all until combined.
Scoop chicken mixture into lettuce leaf cups and serve immediately. Yum dinner is ready! Enjoy!

As an Asian I would say these lettuce cups look absolutely mouthwatering! We’re definitely not fussy about authenticity when we’re only trying to put together a weeknight meal haha. I would recommend Shiitake mushrooms instead of white button mushrooms to give it a deeper and earthy flavor, so definitely use Shiitake if you can find them!

Hi Beth! I've been following you for a year now, and I FINALLY got around to making my first recipe. This Chicken Lettuce Wrap was the perfect recipe to kick off with. Everything was super easy to put together, although I'll have to keep in mind to use low-sodium soy sauce next time (it came out a bit too salty on my end!). Hi Beth, Just made this for the first time last night. I had to replace the mushrooms with a small eggplant (mushroom allergy) with works great with the other ingredients. It was so delicious, even my fussy 9 year old liked it and enjoyed it. My husband and I felt very satisfied without the heavy feeling of a carb-filled meal. This is a super recipe from you, as always ;)

Sure, I'm American, but my husband is French, so I hold both a French and American citizenship (as do our kids which is nice!) so a lot of my cooking is "franglais" but because I live in Southern California I'm also influenced by a lot of Asian cooking as well, Thai, Chinese etc :)

Hey Beth, when you said, "they get a little messy" I thought about a Donair. Have you heard of this "treat" ? It's eaten in a pita wrap with a white sauce, tomatoes and raw onions. It's made with hamburger and a lot of spices. Donairs were created in Halifax, NS long ago. Halifax is famous for them. Visitors who have experienced them before usually go straight to their favourite spot before they check into their hotel rooms! Have a great day! I guess you and your family will have to visit us to experience this treat!!

This reminds me of a wanton (chinese soup dumpling) filling :) You could also try changing the mushrooms with shittake mushrooms and adding pork instead of chicken, I think it will be even more flavourful, I will definitely try out this variant

Hi Laura! Ha ha ha yes it was definitely my Julia Child moment. Do you know her? A US Chef popular in the 60's, really first American cooking show, and she used to do that kind of stuff all the time :) You can find her videos on YT, a great look at the very first cooking show here in the states, that became a popular icon. In fact her kitchen is preserved in the Smithsonian museum in Washington, DC a great visit if you ever come to the states :)

Hi Beth, Love your channel, esp how you do your videos and recipes! You can remove the ginger skin by scraping with a metal spoon. Quick and easy, and no wastage!
btw, I'm a chinese. I cook too, pastas, japanese, korean dishes. I love that individuals put in their own touch in the dishes they cook. That's what make it home cooked! I'm sure one day your kids will coming running back, asking how you cook this and that dishes for them, asking you for recipes. Mommy's recipes! =)

Aw you bet! So glad you like them :) Yes if you don't like mushrooms you could replace them with zucchini. Or just cook the chicken as directed and at the last minute add bean sprouts and peanuts, or cashews. That would add some more textures and flavors that would make it equally delicious!

Ok so I had this and my boyfriend loved it, I forgot to add the bamboo shoots and the mustard, and I added spicy chili oil and carrots... And it worked out. I make a side of rice so we could eat it with and the next day took more sauce, rice and chicken with eggs and made fried rice!!! Please show us how to make dumplings!!!!
