It has taught me to go beyond the boring and focus on becoming a better cook, without fearing mistakes. I could go on, but this channel changed my life.

    Typically I am not a “commenter;” however, I looked over at my 6 year old daughter while watching this episode (who is running around gathering items like a crazy person) who told me she was getting her Sam ingredients ready so she could “cook along with Sam.” I just had to snap a picture. Over the past two years she has cooked a few Sam recipes on her own.

      I want to get an EVO (actually want 2, one inside, and one outside). I think it should become a standard kitchen appliance. I think it would revolutionize at-home cooking, and possibly bring people together more often.

      Get Tamari instead of regular soy sauce, it's made without wheat. And Hoisin sauce is available gluten-free. You may have to get it on Amazon, though. I know Lee Kum Kee and Kikkoman both sell GF versions

    Beware: many carbon steel pans, when the induction top rapidly heats, tend to warp. For short cooking times these pans will typically return to normal. If you're going to use carbon steel on induction, start with the lowest power level, let the pan heat, and then slowly turn up the heat. Matfer and de Buyer both exhibit these issues, but Made In and Misen have also displayed this warping.

To this day, if she's upset, all we have to do is put on Uncle Sam and the boys and she'll immediately calm down and just watch!     For ginger. You can use the side of a pairing knife or use a peeler. I mostly scrape of the skin with a pairing knife.

    Sam, just made these...outstanding flavors! The butter / bib lettuce is too wimpy, need the crisp and crunch of ice berg. I made one for my wife, and she stayed home with me in her little black dress, rather than going out without me. LOL!

    For the pf Chang’s ones..the secret is the dehydrated black mushrooms (reconstituted) and the mushroom soy sauce, the kind that looks like used motor oil.
    Water chestnuts, shallot, scallion, sesame seed oil.
    Please believe me..I’ve been at it for a while. Now I make them better than them

    We have made this a couple times subbing shrimp for chicken (daughter won’t eat meat) and carrot for red pepper (wife won’t eat peppers.Crikey!) and it’s real good. Garnish with cilantro sprigs for a little extra freshness. Love your show and have enjoyed several of your recipes!

    Been a fan for years now- loved this recipe. It is hot as hell out, the smoke from the fires means closed windows, and my tiny apt is sweltering. I’m a grumpy old lady- But you made it all a bit better with this cool easy gift from the culinary gods.

    That looks amazing and simple!!
    You know what else is simple? Growing scallions!! Please please please do it. The ones you get from the store, just leave about an inch above the roots (use the rest of course!), prop them up in a small cup with water - a shot glass works perfectly. In a few days, plant in some potting soil. That's it! Whenever you want scallions, snip them off about an inch above the soil and they will regrow. Always available green onions. :)

    Made your recipe a couple of weeks ago for my wife. As she was watching me cook, she complained "Oh! That's too much work" She really learned one dinner to cook from her mother. I don't hold that against her because she cooks it really well. After cooking the same meal for company for 33 years she has it down pat.... She complained up until the time she took the first bite. She finished her plate and asked if there was more. Needless to say she hopes I make lettuce wraps again..... Thanks Sam. But tomorrow I'm grilling some dead chicken. And then I'm grilling Venison Steaks and Tenderloin a couple of days later....

      I can’t get butter lettuce in my area even drove 40 miles to a Whole Foods no luck so I just use romaine.

    I legitimately made these last night before this video... I'll have to try your version!
    I highly encourage everyone to make it! It's really easy to do. The only hard part is getting some of those ingredients because you may not already have them. But once you do, you can make it super easy the next time! Can't find butter lettuce or don't want to spend the money? Just use romaine or bibb which you can always find! I also add rice sticks to mine.

    Chopped the garlic, avoiding the garlic press. (slight murmur) Introduced the induction burner, obviating the need for the EVO. (moderate rumble) Could you use ground chicken? Yes, but it could be beaks and snouts. BOOM! Making Cooking Great (Fun) Again, for sure.

    Looks good add a few diced waterchesnuts to the chx mixture.. I do enjoy lettuce cups of some sort, I'm an out of control diabetic that 100% needs to get rid of 95% of my carbs.. Love how sweet Sam was on the phone..

    I watched this video a second time and got some ideas that I do, that might be helpful for dealing with lettuce. If you cut across the end of the stem, you waste a lot of good lettuce, and if you break the leaves off, you will have those rough break-points that are time-consuming to cut off. Instead, hold the head of lettuce with the stem pointing upward and then get a small knife at a 45-degree angle and keep cutting around the stem, in a funnel-like shape. It wastes as little as possible and you save time by not having to cut off every individual leaf's break-off point. When you get down to the leaves that are either too small or curly for Lettuce Wraps, just coarsely cut up the rest of the lettuce into bite size pieces to add to your favorite garden salad. Finally, cut the stem into discs and then pieces and add them to a vegetable stock with other veg scraps.
    (If you want to make American "Chinese" food like Moo Goo Gai Pan, stir-fry it and then add a little stock with some cornstarch stirred up in it and you can thicken it just like the restaurants, but it's better because YOU made it!)
    Nothing is wasted, BUT you got:
    -Lettuce Wraps
    -garden salad
    -any thickened dish or soup that you like
    -and probably a lot of stock left over for other things

    What got me hooked on STCG? 10 months ago, the 'One Pan Egg Sandwich.' -- I made a simple one like yours 20 minutes before midnight, and I WOKE MY KIDS UP (8 &10) just to try a bite!!! (They loved it) Amazing, Sam. Great food. Like you say, 'Make it your own, and 'Don't eat shit.'

    Currently 8 months pregnant with gestational diabetes. I'll accept anything that's gonna make me feel better, including a garlic press! Love the videos and hopefully my blood sugars can manage the lettuce wraps! :)
