    Hey y'all! Another DELICIOUS sourdough recipe for y'all on this lovely Saturday. If you have some sourdough discard, and you're wondering what to do with it, MAKE THIS BREAD! I'm telling y'all this stuff is sooooo good!!

    SOURDOUGH DISCARD SANDWICH BREAD:
    1 cup (250g) warm water, about 100F
    1 tbsp (20g) honey
    3 tsp (10g) active dry yeast
    1/4 cup (42g) oil (+1 tbsp (10g) if needed)
    4 cups (595g) bread flour (or all purpose)
    2 tsp (8g) salt
    1 cup (280g) sourdough discard
    Butter for brushing top pre bake and for rubbing on after baking
    In a cup or small bowl, add the warm water, honey and yeast. Mix and let sit for about 10 minutes. It should be bubbly. In the bowl of your stand mixer, add the flour and salt and mix. Add in all other ingredients. Use dough hook to knead for about 10 minutes on speed 2. (You can also knead by hand if needed). If after about 1 minute the dough is still really dry, add an extra tablespoon of oil (10g). Continue mixing for about 10 minutes or until the dough forms a ball and is no longer sticky. Place dough into a greased bowl, put a little spray or oil on the top, cover with plastic wrap and let rise for 1-2 hours or until it doubles in size. Once it's doubled, turn dough out onto your counter or silicone mat (no flour is needed as your dough should not be sticky). Split in half, press out flat and roll each piece into a loaf shape. Pinch all the seams together and tighten the top as best you can. Pop any bubbles that you see. Place into your 8x4 loaf pans, brush with melted butter, cover with plastic wrap and let rise for 1-1 1/2 hours until doubled. The dough should mostly fill out the pan and rise a little over the top. Bake at 375F for 45 minutes or until the internal temp reaches 200F. As soon as they come out of the oven, remove them from the pans (they should just fall out easily) and place them on a cooling rack. Let cool completely (or at least 1-2 hours) before cutting. Slice and enjoy! These freeze very well if you want to prep ahead!

    If you even have to explain to people why you paint butter on your bread, you don’t want them in your life…butter is life and if you know, you know…and if you don’t, well your not the kinda negativity I need in my life…
    My view on butter is that it is the STAR of the show!
    I am the kind of person who uses lobster, crab and anything else as a carrier for the star(BUTTER) of the show from the plate to my mouth…
