GOUGÈRES: Light as air cheese puffs by french chef

- Gougeres is a traditional appetizer in french kitchen. These light cheese puffs are easy to make if you follow few rules when doing dough "pate a choux".
Ingredients (approximately for 8 people) for cheese puffs / gougeres:
✔️ 250 ml / 8.5 fl oz water
✔️ 2 g / 0.07 oz salt
✔️ 100 g / 3.5 oz butter
✔️ 150 g / 5.3 oz flour
✔️ 4 eggs + 1 egg yolk
✔️ 100 g / 3.5 oz strong hard cheese, can be a mix of cheeses
✔️ nutmeg

Hello Vivien, the last time I did choux pastry, they came out crisp but within an hour the pastry was flat and soft. Very disappointing. I shall do them again for the family this weekend and follow your instructions to the letter. Can you tell me if I can use the same recipe and fry them? Regards Maria 🇬🇧
It will be another taste, very dark outside and will get flat even faster. If it got flat in one hour, it wasn’t cooked enough
