    Makes 5 to 6 bowls of ramen
    Ingredients
    For the Broth
    1 bulb garlic, cut into halves
    1 medium size onion, peeled and cut into halves
    2 oz ginger slices (approximately 3 to 4 thick large slices)
    2 medium size carrot
    4 green onions
    5 dried shiitake mushrooms amzn.to/1rAFYyn
    2 sheets 5”x5” kombu, dried seaweed amzn.to/2kKKTg8
    8 cups cold water
    5 cups chicken stock
    1/2 cup sake
    2 boneless skinless chicken breast or 4 boneless skinless chicken thighs
    For the Flavored Oil
    1/2 cup extra virgin olive oil
    3 thin ginger slices
    2 cloves garlic, crushed
    1 1/2 Tbsp gochugaru, Korena red pepper flakes (you can substitute to regular red pepper flakes or thai chili flakes) amzn.to/2AesaTt amzn.to/1Vw1Ebt
    2 Tbsp Katsuobushi, dried and smoked bonito flakes amzn.to/2Hw28JT
    For the Spicy Miso Tare
    1/2 cup yellow miso amzn.to/2LFovSV
    2 Tbsp Toban djang, chili bean paste amzn.to/2LFkii5
    1/2 cup sake
    1/2 cup mirin amzn.to/1Qi9RKW
    For the Seasoning, noodles and toppings
    2 Tbsp soy sauce
    1 Tbsp sugar
    1/4 tsp black pepper
    Fresh, frozen, dry or instant ramen noodles amzn.to/2qb2L5s

    So easy and delicious. I made it 2 times in two weeks and it was the best thing i have ever eaten. The good thing is that it is so much that it is enough for a week. Best recipe ever!

    Seonkyoung Longest! this was SO delicious! Tip to readers though: if you don't have sake/mirin/rice wine DON'T use rice vinegar!

      @liseg89 you can use white wine with a dash of sugar (for mirin), or just white wine. Its optional. But kroger sells a label of sake: www.kroger.com/p/gekkeikan-sake/0072881719912 it's stocked in most stores.

    Seonkyoung, I have seen your videos around for years but lately I’ve been binge watching your recipes. You’re personality and enthusiasm is such a pleasure to experience and thank you for sharing your cooking secrets. I made this recipe last night at midnight (adjusted your be less spicy for my boyfriend’s taste) and it was amazing! I served it to him with leftovers of your bento chashu, and to myself with the chicken breast. I also served it with your ramen egg! Thank you again! I wish I could post a picture here!

    What i really love about your videos is that you always suggest alternatives for certain ingredients because that makes your recipes more accesible to make :) Sometimes when i see recipes they require really specific ingredient and then i wont ever cook it because they are not available or because i dont consume alcohol/pork. I also really like your personality :)

    This recipe is Amazing. I’ve made it several times. I substituted pork belly and I made a homemade pork stock, but everything else I did.. Very good!

    OMG, This is so good! And it’s easy too!
    I made a pot of stock adding kombu, mushrooms, and sake to my standard stock while leaving out some herbs. While this stock is tasty, I think that it would work with my standard stock almost as well. The key to this ramen is the tare and the oil. Adding them to a flavorful stock will yield a wonderful bowl of ramen.
    This is going to become my go to ramen when I reach for a bowl during the week.

    Lots of steps because there's multiple parts to combine together, BUT it was worth it! So much flavor! Didnt have miso so used black bean paste 😑 still was yummy but adjusted due to saltiness. Definitely would make the broth ahead of time and have in fridge for easy access.

    I made the broth and tare, while using store-bought chili oil, with your chashu seasoning but with rolled up chicken thighs! It was delicious!

    I’ve been searching for a spicy ramen recipe that’s authentic because I’m currently in japan but I won’t be forever and there’s a little restaurant called Linyas in Okinawa and their spicy ramen is to die for so I’ve been on the hunt for months 🤤
