Karen, That is exactly the way I make mine 😍We live 35 miles from the nearest Mexican restaurant so this is quick and easy Mexican food at home. Love your videos!

Well I'd be embarrassed to share what I had for dinner before seeing your video!! I've been making enchiladas this very same way for over 40 years. While I've tried to deviate using other recipes, I always come back to this one--it's tried and true! Not sure why I think I will find a better recipe--if it's good, it's good. Enjoyed watching, as always. I have everything to make these so enchiladas may be on the menu tomorrow as I haven't had them in a very long time. After a very unusual warm fall here in Colorado, a cold front has moved in and these will taste mighty good on a cold day. Thank you, Karen.

I make these myself, though I use my own home made meat alternative seitan (a mixture of wheat gluten flour, water, seasonings and spices, to make a vegan shredded chicken product), and I have to say they are lovely. I make my own enchilada sauce, so so easy to make, and use diced sweet peppers and onions mixed in with the vegan shredded chicken (seitan) as the filling. On top of that I chop some jalapeños, taken from the jar, and mix them in also, the result a filling with a little more zing, with the extra spiciness of the jalapeño.

Hi Miss Karen! Just a thought... I learned that if I layer the tortillas, filling, cheese, etc and end with cheese I can bake and slice the servings. They go a little further in our house. 🥰😋❤️
Looks good Karen, I make an enchilada casserole. I do my meat mixture like you and layer my shells in casserole dish then layer it with the meat mixture, beans, cheese , shell and start over then pour enchilada sauce on top then top with lots of cheese. And of course top with taco sauce and sour cream!

Love the grease-soaking tip. I never put the sauce in the meat; I spice the meat instead, and I always add cheese inside the tortilla when I make them instead of beans. And I use corn tortillas. I don't remember where I learned to make them this way. Yours sound great! I may have to try these "new" ideas. For someone who doesn't like "hot food" you sure use a lot of hot sauces!! LOL.
