Paul could do a "how do I do this manly thing" series, like carving a bird, things like that, so many don't have a paternal figure in their lives and don't know how to do things. Maybe a series of shorts youtube videos....

I ALWAYS get hungry for turkey well before the holiday.
Many times a make a small one a month early.
This last Thanksgiving, October for us Canadians , I insisted to go to one of our favorite diners for turkey dinner 😊

I basically do the same thing you do, Karen, but I roast my turkey upside down. I make a trivet, putting onions, carrots and celery on bottom of pan, put turkey on top of it, put some water in roasting pan, then place a big piece of foil over bird.
Keep basting the bird every 15 minutes, about an hour before the turkey is ready to come out of the oven ( usually get my husband to help me with this bit ) then flip my turkey over, remove the foil, then let the turkey roast for another hour, or until meat thermometer says it done.
I guarantee the turkey will be nice and moist!
I discovered this by accident, haven’t looked back!
Since living in England I tend to have our Thanksgiving on the weekend, and my mother in law, does her Christmas turkey like I make my Thanksgiving! Lol!

I have baked many whole turkeys, but one of my favorite way to cook one is from a William Sonoma Cookbook where you flatten the Turkey by pressing down and breaking the breast bone and laying the Turkey breast side up out flat on a large baking sheet. It cooks so much faster and comes out moist. I don’t even like turkey but I love to serve one fully dressed up on a platter with all the trimmings. I’m a firm believer in you eat with your eyes first.

You sound like my son Brandon. Every year about 3 weeks before Thanksgiving he decides he wants a turkey. Then he doesn’t want one for Thanksgiving and he’s the one that bakes the turkey. So I’ve already ask him to not do that this year, I’ve even bought the turkey. I wish he’d bake a traditional turkey like I always made. I think next year I’ll get me a roaster so I can fix my turkey my way and still bake my ham. I send the left over turkey home with him. I keep the left over ham. I’m so ready for thanksgiving.
I bake my turkey whole. I put butter on the inside and out and salt and pepper, that’s it. I cover my with foil until the last 45-60 minutes. I uncover it to brown it good.
My husband and I don’t care a lot for turkey but we eat a slice or two on turkey day.
I know you will have a feast and everything will be delicious.
Thank you for sharing your recipe. Love you. ❤

Hi Karen. I have certainly cooked allot of turkeys over the years and watched and learned from my mother. I remember her always tucking the wings under the main body of the turkey to keep them from burning and twisting outward when cooking. So I just learned to do that also. Another thing I didn't know, but doesn't poultry seasoning already have sage in it? I've never added sage with the seasoning. Something I learned today from you. I'm hunting around here on your sight for your sweet potato casserole. I just saw the notice on facebook, but no video. Hope I find it. Happy turkey day to you and your family. Have a good one. Sandy from OHIO.

Great turkey! Now I'm hungry. 😁 That was fun watching. I've taken to just doing a breast for myself as I'm alone (which I enjoy a lot more than family dinners). I simmer the neck and innards; those all get ground up and go into the dressing. (An old-fashioned one with that meat, a pound of raw sausage, 5 eggs, onion and celery, a loaf of dried, ground, homemade French bread crumbs, and basic seasoning. Baked alongside the turkey for an hour or so and basted a bit, it gets crusty on top. So good! Heavy enough to sink a battleship, but oh my, does it have flavor!) I don't foil the turkey unless it starts getting too brown at the end. I baste a lot, though! I use the broth from cooking the innards, water and chicken bouillon, half a stick of butter and a couple good sloshes of any dry white wine. Simmer that unti the butter melts, then baste the bird every 20 minutes or so. Gives a lot of drippings as the baste browns in the pan - I don't let it get too deep so it gets some crust on the pan - and of course basting with it gets the bird browned more too. Any left over gets combined with drippings for gravy. We're a cold water and flour thickener family. 😄 I rarely get lumps, but put it through a sieve first anyway, just in case. I always want lots of nice brown gravy, so I make double.
I've already got everything except turkey - the stores are low! - and lard for my kolache dough. I can hardly wait for an orgy of cooking, and a freezer full of leftovers. 😄 Probably mostly kolache, I confess, because one batch makes 3 dozen, LOL.
    Happy Thanksgiving!

@@KarenJonesFoodFamily Thank you! And yep, my husband passed in 1998. I couldn't stand his family. My parents had built a log cabin house up by the Canadian border in Washington, and I knew she had been glad to stop cooking holiday dinners for even just the immediate family, so I wasn't going to descend on them. I simply decided to go with it. Why deprive myself? It's dishwashing I hate, not the cooking. 😄 And I love a good turkey dinner. I do occasionally 'cheat' with Stovetop turkey dressing - about half the years by now - but we never had that, so I love it too. I have an extremely happy week of leftovers! A little longer if I make the homemade dressing, LOL. That has enough meat to be a meal in itself, and it reasonably fills a 9x13 pan, thus quite a lot. Gravy, cranberry sauce, dressing, all set.
