This recipe stuffs minced meat inside leek leaves, making a tasty dish with different flavors and textures.

Ingredients:
3 thick leeks
Boil in water until soft, about 20 minutes
Sauce:
Remaining leek, chopped finely
1 tablespoon olive oil
2 grated carrots
700ml vegetable broth
Salt and pepper to taste
Minced meat filling:
400g minced meat
1 onion
3 cloves of garlic
2 tablespoons breadcrumbs
1 egg
1.5 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon paprika
4 tablespoons sunflower oil
Preheat oven to 180°C (350°F), top and bottom heat.
Leave pockets in the oven for 1 hour.

This looks great, i like that you use all parts of the leek. Would probably add sauteed shalots to the veggie mixture. The presentatoin is great! Will try it
