This is a gorgeous meal! That golden brown crust on the squash looks so yummy. What oil do you use in the cast iron? I know they say olive oil has a low smoke point but is it ok to use here? Was the seasoning rub just onion powder/garlic powder/sage, anything else in that blend? If I could buy your mix in NYC I certainly would. Thank you.
I tend to stick with a veg oil and have not tried with olive oil. On the blend any traditional sage-onion blend works or whatever your favorite flavor blends you want to use works too. Straight up salt and pepper works too. Thank you!

so... the only reason you're calling this a Tenderloin (named after a cut of meat) is because of how you cut it and presented it... that's oddly hilarious... so you could cut it in the shape of a beef liver or kidney, or even a chicken breast and just put the name Butternut in front of it... projection + rationalization is fascinating... but it does look tasty...
