Chicken Pho Recipe (Japanese-inspired Vietnamese Rice Noodle Soup) | Cooking with Dog

- We are making Pho, a much-beloved Vietnamese soup. Using chicken wings and aromatic vegetables, we'll make a delicious soup quickly and easily. This soup is lightly seasoned but exceptionally tasty. It goes well with the flat rice noodles, and it is very delicious!
How to Make Chicken Pho

(serves 2) Cook Time: 50 minutes
[Broth]
800ml Water (3.38 cups)
3 Chicken Wings
1 Chicken Thigh, trim off the excess fat, net weight 240g/8.5 oz
3 slices Ginger Root
3 Garlic Cloves
1/2 Onion, cut into 1 cm slices across the grain
Coriander Roots, or coriander stalks
1 sheet Dashi Kombu Seaweed, 10x5cm/3.9x2 inches
2 tbsp Sake
1 tsp Chicken Stock Powder (Granulated)
1 tbsp Nuoc Mam, Vietnamese pungent sauce made from fermented fish, substitute: nam pla (Thai fish sauce)
1 tsp Salt
[Noodles]
150-200g Dried Rice Noodles (5.3-7.1 oz)
[Toppings]
1/4 Red Onion, sliced

100g Moyashi Bean Sprouts, lightly boiled (3.5 oz)
Coriander Leaves
Spring Onion Leaves, chopped
1/4 Lemon, or lime
Black Pepper

I have been a fan of Cooking with dog since 2012. So glad that finally Chef cooks a Vietnamese dish cuz I'm a Vietnamese 😊
Japanese-inspired* I'm American and grew up in Vietnamese culture and I know how to cook Vietnamese food. I've also visited Vietnam so I know the differences between westernized pho and pho served in Vietnam. Its important to me to make the distinction that Vietnamese Chicken pho (just like beef pho) will utilize the appropriate spices like star anise, coriander, cloves, cinnamon, and others to create that flavor.
We were worried about how Vietnamese people think of this Jpananese-inspired version but we are a little releaved to hear that.🍜😊 Thank you for still supporting our channel.💓

I am from Vietnam, thank you for cooking this Pho. This is a combination between Japanese and Vietnamese cuisine.
YES, thank you for pointing that out. Its an inspired dish as Chef put in the title. The Japanese influence comes from the addition of konbu and sake in the broth as well as wakame as a topping (and the excluded pho spices like star anise, cinnamon, etc). As someone who grew up in Vietnamese culture and cooks both Vietnamese and Japanese food, I can say that Japanese food tends to use more milder flavors (which we see here with this broth). Vietnamese food tends to be very bold in its flavors with pickles, chilis, and fish sauce.

This has been one of my favourite youtube channels for years. Even my children grew to love it. My 2nd home in California was Japanese, so I grew up eating delicious food, surrounded by Japanese and art. Interesting take on pho ga! Looks good, but could really use some spices like star anise or cassia
n coriander seeds, too. Definitely coriander seeds for Phở Gà.
Those are usually medicine in Japan and putting them in food will make the dish inedible for most Japanese.

Parboiling the chicken wings removes any unwanted flavor and odor.🐔 This will help to make a delicious broth especially when you are using meat with bones.😊

Your Japanese-inspired 'pho ga' looks great. You could even enhance the broth flavor even more if you make it with the carcass from a whole chicken. The meat would make a wonderful first course of Yakitori. Now you will have a fusion of Japanese and Vietnamese food!
