    This is one of my favorite salads because it keeps really well in the fridge...and it is incredibly delicious! I love the nutrient dense vegetables, tomatoes, green bell peppers, cucumber, red onion, olives and the homemade balsamic dressing is amazing too. Make quadruple batch and keep it in the fridge all week. It was so easy to dice up with the Breville Sous Chef 16 Peel & Dice.

    I’ve been violently ill with the flu for almost 2 weeks, and haven’t started the challenge yet. But I have my goals and batching ideas. I’ve been surviving off applesauce and water, mostly... can’t wait to jump into it once I’m better! Love the addition of the chickpeas!

    I just made this for the first time. I'm hooked. I struggle with salads having enough flavor while keeping it oil free and without added salt/sugar. This works for me. I had a bag of shelled edamame in the freezer that I threw in (and it seemed to fit well with this). I have plenty to work on all weekend. I did add celery as Denise Sergeant suggested (as I'm, for some reason, obsessed with celery). Thanks for the video, Dillon!!

    Ive been eating this all this week only difference is I add 4-6celery stalks thinly sliced. My dressing is honey mustard. Absolutely love thus. For a change just put lettuce on plate then veggies & dressing. God bless you from grandma Katie in Oregon

    Me again! I make almost this exact salad, I would recommend celery as an addition as well. And personally, I would use red, yellow or orange peppers (as green peppers are just unripe peppers and can be hard to digest).

    This is so freaking getting made soon. Wow, lemon juice and balsamic instead of olive oil. Balsamic, my favorite "beverage" next to coffee. My kids and coworkers think I'm weird when I drink the balsamic left in bowl after eating spinach salad

    So good to have something like this ready to go. Great to put over greens and done. Salad made! I hate to chop everything when I'm tired and want to make a salad. I might include celery to the mix, and add some cut up mushrooms, and avocado when serving. Love this idea. Thanks for the recipe.

    Just ordered your cheese sauce, mushroom gravy and a tee. Super excited to try them out. I’m hoping I love it because as much as I love cooking, sometimes I don’t want to make my own. I also don’t want a bunch of unnecessary preservatives in most store bought items

    I really dislike cucumbers but once I tried Armenian cucumbers it was on. Try a Middle Eastern store for bulk olives. They're almost half the price of a regular grocery. Only downside is you have to pit them but the taste is awesome. Get the cukes from the ME grocery as well. They're also called miktha there. Thanks for the great recipe ideas.

    I make this ALL the time (even before I went WFPB) but I use apple cider vinegar as my acid and no olives (not a fan). You're definitely my brother from another mother when it comes to garlic though!

    I think you may have ordered the “pro” model I can’t find one with the Parts that you have. The units are all over the place with less or different accessories it’s really hard to shop. I wonder if I can just order the “Pro” model so I will try that. Then get the additional disk set. Thank You

    Hi! Awesome recipe. I'll leave out the olives simply because I have never tried them (sounds like they are delicious but since I've never had them I won't miss 'em). I really do enjoy chickpeas, from hummus to stir-fry's to chickpea salad--they're always good. I have been cooking all my beans from the dried bean since I got my instant pot and that also goes for chickpeas. I am using and loving all my new kitchen gadgets and appliances Santa got me. Thanks so much for another great whole plant-food recipe :) :)
    p.s. Since I started the whole plant-food SOS-free lifestyle about 3 months ago, I am doing great and never felt better. I must say I feel so good I can't imagine ever eating salt, oil, or sugar again. And my 30-day challenge is going awesome as well. I am so glad I found your channel--there aren't many whole plant-food sos-free channels that I've found on YT,

    Does the Pro come with one dicing blade? Because I can’t tell every picture I look at does not show one. Your extra box only has 2 additional sizes correct? I think there are 3 sizes

    Can you use the slicing blade without the dicing disc, or do you have to change out the spindle and blade and use the regular spindle and slicing blade? Just thinking it would be an easy way to slice the olives and maybe slice the tomatoes with the biggest dicing disc? If I'm in a hurry, trying to think of the fastest way to cut everything, with the least amount of cleaning of equipment.

    I beg to differ on the peeling. Mine does just fine on smaller potatoes that would be too cumbersome to do manually. And, I also prefer to run the garbage disposal rather than having to dig out the peels by hand. For something that's too large for the peeler to work efficiently, yes, I will do those the traditional way. But my budget calls for smaller taters, which the Breville works well with.

    Does anyone that has this know...is there a difference between the peel and dice processing bowl and the standard processing bowl that comes with the older Breville food processor? And is there a difference in height in the spindles of the peel-n-dice spindle and the other spindle used for the slicing blades? I am just wondering why can't people just purchase the spindle and the dicing blades without getting a whole different bowl & lid in the conversion set? Thank you.

      I do not have a Breville FP (yet), but have been researching P&D model for awhile now. Other commenters have stated they've been told by Breville that the bowl for the Peel & Dice is made of a stronger material than their other FP's. You may want to contact Breville directly to confirm that for yourself.

    Green bell peppers are actually unripe. I'd do any other color on the bell peppers. (I learned about this when one day I ate green peppers -- only -- for lunch one day and ended up with terrible stomach pains!)

      I eat green no problem. I did not know not ripe. I thought green red yellow orange seperate varieties. I will note one yr grew green and if left on went yellow. Not any other color though. Thanks for info.

    I come from an area where greenhouse cucumbers are grown. I'm not sure why you think the cukes have a wax coating?? I'm pretty sure that's false and I can ask the next grower I run into. (I would be talking about cukes grown in Canada.)

      I dunno, you can hear the squeaky peel when I rub them together. Whether you want to call it wax or magic it's a texture I do not love on my cucumber so I peel them. If you like it, then by all means leave those cucumbers just as they are. Enjoy!

    What kind of Balsomic did you use? Did you say it's homemade? If so, do you have a video or recipe for it?
