    Hi Guga: Being an old meat cutter I love all of your videos. I have one suggestion on how to slice a strip steak after cooking. Slice the steak in half then cut the steak so you make sure it is exactly across the grain. When you cut the way in the video you can see it is not across the grain. Let me know if you like the difference.

    Hey Guga, I actually live in an apartment so basically I have to pan sear every steak, but I do love the butter with fresh herbs on this. What I do to get the smoke flavor to almost any Texas meat recipe is that I use liquid smoke, even to cook a nice barbecue sauce. I do recommend it, but as you said, just a bit, cause too much will sour the flavor.

      now I'm wondering which of the X-men everyone else would be... I think Guga has to be the Professor of steaks, and not just because of his hair!
      Ninja would be... maybe Juggernaut? though he had the same ear-splitting super power as Banshee before Guga started turning down the volume on him. Maumau...     When I lived in my condo I cooked my steaks exactly as you did in the cast iron with butter. It works on the stove but does get smokey inside the house. I have had grilled as well and I think I agree with Angel, I prefer the cast iron with butter slightly more. Both are amazing though. Love both channels Guga. Keep up the good work!

      @@Shaz- depends on the cut. for med rare, for most steaks an inch thick or more you'd do 3-4 mins per side and then let it rest for 10 mins or so. Try to learn the palm trick for telling how well cooked your steak is. Different parts of your palm are different cook times, so find the spot on your palm that;s the cook time you want and cook the steak until when you poke it it feels like your palm spot. works pretty damn well

    First, I must say that the 4K cinematography in this video all throughout was excellent, especially during the entire cooking process. The colors really popped. Well done to the Director of Photography. Now in terms of the results, I can see why Kayla and Guga like the grilled steak better because of the added smokiness and char and that's why grilling and smoking are always superior for cooking your meats. HOWEVER... grillers and 'cuers often forget that wood and charcoal smoke are SPICES and should be used sparingly to accent the flavor of the meat, not be the main player. Too often people overdo it and kill the actual taste of the meat itself. So in this respect, I completely understand where Angel was coming from. it"s nice to actually taste the meat by itself sometimes. The smoke gun is cool and makes for an awesome visual presentation but it's not quite the same as traditional smoking because it coats rather than penetrates the meat. I find I use it more to wow guests at the dinner table than actually cook with.
    And lastly, for those of you below that compared Angel to Wolverine, thanks for sticking that image permanently in my head. Aside from the fact that it's a 100% uncanny likeness (pun intended for old school comic book readers), now I'll never stop wondering why he uses a fork and doesn't just pop out his claws to eat with! :D

    i have a very expensive grill, smoker and out door griddle, but i prefer a cast iron pan! can’t beat the milk fats from the butter basting process! for me that’s the best part is using my compound butter in my cast iron pan (and again over the top during the resting stage)

      bruhh try this. I put my cast iron pan on the grill and it heats up, Cook the steak on the grill, the bast the bad boy on the cast iron pan thats right there. BEST of bothe worlds.

      Cast Iron should be obsolete; it sucks for efficiency / heat distribution / weight / brittleness / etc. It's only by romanticism that it's remotely popular as it isn't competitively priced with tri-ply or disk bottom pans when it comes to performance. The only people I see adopting it are those who are only familiar with Teflon pans.

    Just did my first Wagyu steak, reverse sear (oven) then finished on the grill (natural gas) salt, pepper and garlic powder. I think I died and went to beef heaven. Thank you for showing me what real steak should look / taste like and how to do a steak properly.

    From what my chef friends tell me, pan-searing allows for my flavor because you're spooning the sauce on top of the steak which locks in the flavors into the fibers better. I have to agree with them. Ever since I tried it myself, it's been the only way I've cooked my steaks since. That doesn't mean that a grilled steak is worse though. Sometimes the flavor of the smoke is just as good.

    I don't have a grill right now and I pan sear my meat (beef/pork/fish) and I don't use the oven first. I put plenty of butter in the pan and season with salt, fresh ground pepper, garlic powder, and sometimes a light sprinkling of paprika when cooking pork. I get the pan really hot, drop the butter in and sear the meat immediately. Then I lower the temp and cook to preferred doneness (med-rare for beef, med for pork and med-well for fish). Since I don't have a grill I typically purchase slightly thinner cuts of meat (1/2" for pork and 3/4" for beef if I can get the butcher to cut it for me but 1" max), and usually by the time I have a good crust on the outside it's almost done.

    What if you seared the steak on a charcoal grill, but instead of just moving it to the cold side to finish cooking, you had a cast iron pan with butter, thyme, and garlic warmed up and ready to go? That way, when you move it to the cold side to finish cooking, you could also be basting it in all of those juices every once in a while. Seems like maybe it could be the best of both worlds...?

    For me to get best control of the meat I use reverse sear. Owen to pan and I let the meat rest for 10-15 minutes. If I got time I do it low temp in owen and really hot in pan. It works every time. Always using a stick in the meat for correct temp. Nice videos Guga btw. Keep it up.

    Quick question: how long should I cook the stake indoor to get medium rare if I don't have a thermometer (assuming thickness of the steak is about the same in the video)

    Indoors I do mine on a flat lodge cast iron the same way. I also have a small lodge basting pot I melt my butter, garlic, and thyme in to baste when using a grill pan. Sometimes you just need the grill marks to add to the fun

    I have a grill and use it a lot! But I always use my cast iron skillet when cooking my steaks. And I'm from Texas haha

    As a vegetarian since 2016, my meat free streak would end in a heartbeat if Guga was around lol. Seriously considering making my parents a prime steak one of the ways guga does and eating my own :D

    I mean, isnt it a bit of an unfair comparison? the "outside" steak is just plain but the "indoor" steak has butter, thyme and fresh garlic? :D

      benefits of both outside:you got beautiful char and smokey flavor indoor:flavorful steak because of butter basted with thymes and garlic

    You miss the charcoal flavour... but mate, that butter/rosemary French French basting is literally MAGICAL and I cant live without it.
    Maybe, sear it with charcoal and throw it straight in a pan for basting for enhanced flavour.

    @Gagu Foods . Hi there, if you cook it on the charcoal and then sheer it in the pan with your butter garlic and thyme, will the outcome be a combination of both? it will have the smokey flavour with the garlic butter juiciness too? great video thanks.

      Could definitely watch that. Plenty of 'exotic' meat subscriptions. Most exotic I've had (not counting gator because I live in their damn house) is Antelope ribs. Definitely not your normal venison taste!

      if you havent tried them try dry/wet aged steaks. cheaper than most cuts of wagyu but aa helluva lot more delicious than regular steak

    I spread a little Dijon mustard on top of mine to get a great sear on both side for about 5-7 minutes depending on the cut on a low-high

      There is. It’s a matter of the juice coming out when you cut it or when you bite it. If you let it rest it comes out in your bite if not when you cut it.
