Loved pig's feet haven't eaten it in years. Never knew pig's ears could be eaten. My family..Grandma and mother cooked the feet and add what we call butter beans.
Chris, you need to come to Barbados and see what we do with them. One of our national dishes is Pudding and Souse, can be used anytime but mostly done on weekends, especially Saturdays. The pudding is grated sweet potatoes with herbs and spices, steamed and served with Souse. The older folk used to add pig's blood to the mixture and stuffed it in the intestines, called it black pudding, most people no longer use the blood or intestines, just steam the mixture, serve it with Souse and slices of Breadfruit. Our Souse is cooked pork, feet, ears included, you make a pickle of cucumbers, onions, lime juice, salt and parsley. The Pickle is poured over the meat. Other Islands make Souse but not the way we make ours, if you have you'll never do it the way you do yours again.
I cook this all the time because they are great for getting collegen into your diet. Only difference I use is I add bay leaves. And right before finishing, I add rice (uncooked) and pinto and black beans. Just a way to make a complete meal in a bowl with a big slice of homemade corn bread.
My granny used to pickle pig feet and pig ears. And make pig ear sandwiches. Never could handle head cheese. They would slaughter a hog every year. Hang him from a tree. Make lye soap. Good memories.
If you are black what do you think your slave ancestors ate. They took the worst cuts or parts of me at that was given to them and made something tasty from it. That's how we get some dishes we have. That how we got our black pudding and Souse which is one of our national dishes.

I'm a 🐖 feet nut 😂 I make them twice a month and I do mine's in Crock-Pot overnight about to put some one in a few minutes but I use red wine vinegar onions peppers garlic of course chicken seasoning but I would never eat pig 🐷 👂 probably because I don't eat the skin of the 🐖 feet it's a texture thing
