In alkaline medium we get the salt of carboxylic acid i.e. carboxylate salt. On acidic work-up (addition of H3O+) protonation of carboxylate anion occurs and we get carboxylic acid.

My question too like if the rule is we only need one benzylic proton how are the carbon carbon bonds broken since deprotonation cannot occur
