Lindz,my Mom always had butter/margarine wrappers in the fridge to grease pans with.Waste not want not.Never had a fruit loaf but I do love banana bread with walnuts of course! You make me love Tuesday mornings.😍

Just made your Fruit Loaf, it is delicious and such an easy recipe to cook. I added ground
cinnamon and mixed spice to the sifted flour which makes it easier to incorporate. Thanks Linz

Hi Eric 👋 When buying your loaf tins look for some without the lip as I bought some 1lb ones that didn't fit 😉 I now bring a small tape measure with me when shopping ( probably looks a little odd 😅) Happy cooking lovely x

Looks great Lindz, I watch Graham and Wendy on their channel Graham Gets About and a couple of weeks ago they made a cherry cake in a 1lb loaf tin in the Cosori air fryer oven,they said it was there 3rd time making it and the 1st two attempts the cherries sank to the bottom of the cake,it was still tasty tho,your fruit is well spread through the loaf,another great informative video,thanks again Xx
Hi Ricky 💜 A tip for sinking fruit is to coat it in a little flour before adding (normally only works with wet fruits) x

Lindz do you know whether this recipe would work in a Ninja Foodi multi cooker using the steam & bake function? Cake recipes for it are not easy to find.

I used the steam & bake time in the Carrot Cake recipe in the Ninja Foodi Smart Lid but the ingredients from my frien's recipe:
1 cup of mixed fruit & half cup brown sugar soaked overnight in black tea. Next day add 1 cup SR flour & a beaten egg, cherries & chopped nuts if you wish. It fills a 1 lb cake tin but I used a spring form round tin lined with baking paper. I used steam & bake at 160C and set it for 45 mins. I started to check it after 30 mins as the top looked fairly brown. Think it was done after 35 as I used a cocktail stick to check same way as for checking a Christmas cake. The Foodi didn't come with a temperature gauge not that I would know how to use that!
I found it a bit too chewy for me & nothing like my friend's version! However she said I should have wrapped it in the baking paper & left it overnight! I might add it didn't last long as my husband really liked it as it wasn't too sweet!
I'll try it again using your recipe & just the airfryer function but as I'm new to this way of cooking I'm not very confident. I'll keep checking your site, it will be great to find the multi cooker recipes. The Ninja UK website is quite poor.
