Traditional Cudighi Sausage (TrendKill Kitchen)

    This is my traditional Cudighi recipe, it is a Italian Sausage that has been adopted by the Upper Peninsula of Michigan and something I grew up eating.
    Recipe:
    1 (5lb) pork butt
    2 Tbsp salt
    1 tsp ground black pepper
    1/2 tsp cinnamon
    1/2 tsp nutmeg
    1/2 tsp allspice
    1 cup of dry red wine
    6 garlic cloves
    1 cinnamon stick
    1 clove
    Course Grind the Pork Butt.
    Mix the salt, pepper, cinnamon, nutmeg and allspice into the Ground Pork Butt.
    In a small saucepan combine wine, cinnamon stick, garlic, and clove. Bring to a boil and boil the mixture for 5 minutes. Shut it down and let it cool completely.
    Strain the liquid and mix it into the meat.
    Lay some parchment on a sheet pan and press out the meat or roll in plastic wrap. Let the meat refrigerate for a couple hours or a couple days then smoke, grill, freeze etc.
