- We challenged chefs of three different skill levels - amateur Bianca, home cook Emily, and professional chef Joshua Resnick from the Institute of Culinary Education - to make us their take on tater tots. Once each level of chef had presented their creations, we asked expert food scientist Rose to explain the choices each made along the way. Which tater tots would you choose as your next dipping companion?

One of the coolest things about Emily's "hero's journey" has been how much more touch she has when seasoning. Confidence and determination.
Bianca's recipe is for like that hunger you feel at 3 am and want a quick snack
Emily's recipe is if you want a side dish with your main meal with your family or friends
Joshua's recipe is for when you want to impress someone with your cooking skills, and also patience, cause ain't no way i am waiting for 2 days for some tater tots

I've never thought of tater tots as a gourmet experience. Joshua proved me wrong. Though really, Emily's looked pretty amazing, too, and even Bianca stepped up the frozen potato game with all that seasoning.
I believe the original potato pavé recipe is Thomas Keller's. It's actually a fancy version of scalloped potatoes. Joshua just totted them up by deep frying them instead of pan searing.
I haven't watched these video's in a while but I'm so glad to see that Emily made it to level 2!

So, Emily is promoted, and is still an original. How do you not love her? Bianca is a sweetheart, and I love a "saucy girl." Josua, like all these pros, is way over the top!
