You are correct but you didn't say why. Wet does not like to stick to wet and dry does not like to stick to dry. This is why you put (wet) meat in (dry) flour before you put it in (wet) egg (the binder) then the (dry) dredge. Alternatively you can put it back in the egg then dredge again.

Shallow frying in a pan means the oil lost it's temp too quickly, which would've stewed the squid before it got crispy. Deep frying ensures a quicker cook and more tender squid. Rice flour is also great for fried squid

level 1 john just needed to lightly coat the calamari in some flour before the egg mixture and it woulda turned out great
