- We challenged chefs of three different skill levels - amateur John, home cook Daniel, and professional chef Taka Sakaeda - to fry us up some calamari. Once each level of chef had presented their creations, we asked expert food scientist Rose to explain the choices each made along the way. Which fried calamari are you reaching for first?

And now, he's dealing with an incident where his how grown giant squid flipped a vessel. RUMINT has it he's also struggling to put it down.
level 1 john just needed to lightly coat the calamari in some flour before the egg mixture and it woulda turned out great

You are correct but you didn't say why. Wet does not like to stick to wet and dry does not like to stick to dry. This is why you put (wet) meat in (dry) flour before you put it in (wet) egg (the binder) then the (dry) dredge. Alternatively you can put it back in the egg then dredge again.
@@captainkirk4271 pretty much all seafood is frozen at sea these days.
What I like is that the more skilled/profesionnal the chef is, the more fresh the calmar is 😂

Taka on point, the tentacles ARE the best part! Would eat a bucket of just tentacles.
The first guy skipped dredging in flour before the egg, that's why the crumbs slid off. Shallow frying in a pan means the oil lost it's temp too quickly, which would've stewed the squid before it got crispy. Deep frying ensures a quicker cook and more tender squid.
Rice flour is also great for fried squid

As someone who indulges in street calamari everyday after school back in hs, got to agree with chef taka that the tentacles were the best parts 🤤🤤 it's like all the flavor is concentrated there

to ensure if you do john recipe that the egg and bread crumbs stick to the calamari, before dredging in the eggs, dip them in flour, the eggs will stick better, and therefore the breadcrumbs too!! :)

Only recall having calamari once when I was a kid at a bar with my dad.
I always liked fried shrimp and the calamari to me wasn't much different so I enjoyed it.
Level 1 chef before dredging : I don't wanna see any white anymore *proceeds to dredge all at once itstead of singulars*
Ends up with barely dredged calamari

My favorite calamari dish is linguine calamari it’s basically spaghetti with squid all over it

best part is they all loved what they cooked
In Italy we don't use egg in the "breading" part. We use just starch, and not either starch+water.
We don't use that, because a big and flavoured coverture, just like tempura for example, will cover the taste of the calamari. And we don't want they taste like a zucchini tempura.
I would love Chef Taka's fried calamari with a beer
John is like a 1.999999 lvl but they don’t want to make him lvl 2 because they are running out of level 1 chefs lol

I'd eat all three of those, but the fact that level 3 used tentacles gives him a heads up. Level 1 - the commercial breading with an excess of ingredients is something I'd usually avoid.
Add a blind taste test and you’ve got the next big cooking show.

I love fried calamari, but that bag o'frozen squid rings didn't look real. It was interesting seeing the whole squid prepared. One thing nobody stressed was how quickly calamari has to be fried, ~3ish minutes in 375 degree oil. Go too long and they get rubbery.

i dont know about logistics, but imo it would be so much better if all the chefs tasted each others food at the end instead of the food scientist

I remember buying squid for 39 cents a pound. Then they changed the name to calamari and the price shot up.

I wish they mentioned that when you fry calamari you shouldn’t be going for longer than 1:30 or you overcook it
Level 1 and Level 2 seem pretty close to me… not sure what almond milk if it doesn’t have acidity in the marinade. Another fun video either way.
