The curvy stuff that looks like a statistical graph? You go to "image" - "adjustments" and then "curves". By dragging the line around in the lower left corner you change the lightness/darkness of the darkest parts of the image. By dragging the line around in the upper right corner, you do it for the brightest parts, and the middle is for the middle tones. You might ask "why not just use the contrast slider?" but that's sometimes not precise enough. Sometimes I just want the brighter parts to just be a tiny tad brighter, but everything else is fine the way it is. You could achieve the same effect by just using a big brush and draw with a brighter color on top of the parts you want brighter and set that layer on "soft light"or something. But that takes more time, is more work, is less accurate, and more of a hassle to adjust if it's not exactly right - especially if you don't even know yet what the best version could be. The curves slider is quick and easy, best for quickly testing out what looks better/worse.
Using lots of sliders, big gradients, and using "gradient map" for the quick inital coloring of a black and white piece to get things started. For the red parts I just used the layer setting "multiply" to add the color since I knew I don't have to worry about making it a tad darker than it already was. The slide adjustments that photoshop offer can turn out to become a crutch, and I've realized some time ago that I'm depending on them too heavily, and end up making my images look more monochromatic - since the sliders adjust the image as a whole if I'm not smart about how I use them (like, a solution would be, to select specific parts of the image to isolate them from the rest, and use the sliders on one part at a time) But I still need the color sliders often to just get a better idea of what colors I want in general in the image. So it's lots of playing around testing different things, knowing when to use them, and when to just add color "manually". (like I knew I didn't have to worry much for this piece, since it's basically fur-color, skeleton-color and black, and could just focus on the shading.) I hope that gave you some ideas on what to look into?
