Freeze drying works by freezing the candy, lowering the pressure, and then removing the ice by sublimation. This process works by transforming matter from a solid into a gas without the freeze dried product ever becoming a liquid, allowing you to get something you freeze dry moisture-free. Additives in candy that are highly acidic and flammable expand more and help this process happen faster. Hope this helps!
The more sugar the more they puff up usually. Your life savers and organic fruit roll ups were not done yet and you should have hot or at least warm trays when you remove them. If you do salt water taffy, make sure to cut the pieces into at least 2 pieces, we do them into quarters so we get to eat 4 for every 1 piece lol. Salt water taffy puffs up really good 🙂 Keep having fun, we have been doing it for 4 years and every time is an adventure LOL Let the girls try doing jello for some real fun!
After you do a lot of freeze drying you’ll find out high sugar foods don’t freeze dry well, they sort of explode, like how the candy puffs up. Sugars in fruits are few enough where most of the time there isn’t an issue. Sometimes when you have really ripe bananas or pineapple, the sugar content is higher and it will also expand a little or get a sugary foam on top. It’s all due to the amount of sugar. That’s why some things like honey are not recommended to freeze dry. I’m not sure why this is exactly but it’s definitely related to foods high in sugar.

Charly best breakfast ever l so cute. Junie was digging in then covered her eyes when you started counting so precious and Peyton trying to process the crunch. They looked like they had a ball. How funny this morning when I woke up I was thinking about how did they figure it out long time ago how to make cheese or butter out of milk. Accidental or experimental? Now you are experimenting freeze drying candy. Wondering if you can make something else out of freeze dry candy? Eg. if you crunch it down to little pieces can you bake with them? It would be interesting to get a food technologist to analize all the change in them. Very fun project. Loved it. Looking forward to the rest of the freeze dry projects. Are you doing a jurnal on them? This is the way to "grow" the next generation of inventors👍😊

Higher sugar content makes things expand more. Especially added sugars. Ice cream is really fun but different brands act diferently.

Also I used to purchase freeze dried rose and rose buds for different things…….like Potpourri.
