【Vegan】Proso Millet ZONGZI with Dates

- As the Dragon Boat Festival approaches, this year, I used millet instead of glutinous rice to make zongzi. I substituted dates with medjool dates. Although millet is whole grain, it has the same soft, sticky, and sweet qualities as glutinous rice. After cooked, it has a strong millet aroma, making it very suitable for the elders and children. You must try it!
Ingredients:
Proso Millet: 665g (enough to make about 17-18 zongzi)
Fresh Bamboo Leaves for Zongzi
Medjool Date
tips:
Many people soak millet to remove the astringent taste, but I personally don't like soaking it. As long as you don't use the aged millet, fresh millet doesn't have an astringent taste. Additionally, soaking can make the texture more loose after cooking, while unsoaked millet has a chewier texture and a smoother surface when peeled. I prefer the second option.
