Dove Poppers I Tuffy Stone

If you like to dove hunt and looking for a new way to prepare them, this is delicious. It is also a versatile recipe and you can substitute the dove for duck, pheasant, chicken or pork. I have been dove hunting since I was a young teenager and always have cooked, what I harvested. A key to this dish, is to not overcook the dove, while making the bacon crispy.

Did that with a pile of teal breast last wknd. I'm a little perturbed that I didn't remember to make your white sauce though. Not @ you Tuffy but one tip to remember is to NOT buy the thick cut bacon. It obviously takes longer to crisp so it's easier to overcook a delicate protein like teal, duck or dove. You can include venison in that category as well.
