About 10 years ago I was at a bachelor party weekend and most of the guys there were hunters. The first night one of the guys made a very similar recipe but with duck breasts instead of the dove. It was such an awesome appetizer that we decided to skip dinner and just keep making more duck poppers. I swear every guy there had at least 15-20. Absolutely amazing!
Love that you're doing a hunters recipe with a tasty piece of game. Another good recipe is plucked and fried dove.
Brings back very fond memories. We were lucky to have plenty of dove and occasionally quail in our 3 acre yard in rural Tx. Could pop em from the back porch and have the smoker going in no time
Man this year I candied up some jalapeños & grilled them. And the popper were spectacular! Everyone demanded I make them that way every year.

Great recipe. I use a very simple brine (salt, sugar and black pepper) on my doves and ducks first. Preferably at least 24hrs but up to a few days (not too heavy on the salt) if I shoot em several days before the cook. On or off the bone it pulls out excess blood and gameyness(sp?). And it’s easy to marinade in whatever you like after the brine.
Making these now minus the dove didn’t have any so I put a strip of steak on it. I think they chilled long enough I’m ready to try them out. Thank you for the recipe. Have a great day. Lisa

Dude! I've been a fan for a while and so glad to see the wild game post. I've been doing dove and duck for years, my fav is gyros with a homemade tzatziki but you can't go wrong with poppers!
Made these yesterday. Absolutely delicious
My sweet little daddy 😇 used to make this. 2 dove breasts with a sliver of jalapeño and a sliver of cream cheese between them. Wrapped in bacon and spritzed periodically on the grill with 1 part brown sugar and 1 part apple cider vinegar. Yummo!!
I've suggested this many times. I marinate the dove breasts in Italian dressing overnight.
Man we used to add a shrimp too at the camp for dove season.

I enjoyed a “game” video. I vote for some more, deer, elk, bison, alligator, goose, wild turkey, squirrel, rabbit. I’m sure there is some in the library of yours, but some more would be a great treat.

I put mine in the freezer. Just long enough that the inside is set and the outside is not quite frozen. It works well. I also use the cheese side down first cooking method. If I get thick cut bacon I stretch it thin with my hands and it works well

Any recipe ideas using snapping turtle? Growing up my Grandma had a recipe that was similar to pulled pork or shredded turkey. slow cooked with a gravy, We ate it like a hot turkey sandwich! It was amazing.
I love experimenting with pepper popper recipes, but this I wouldn't have dreamed up. Now let's see if I can catch that dove that has been picking at my peppers for some culinary revenge.

If you divided the cream cheese block into quarters or 16ths before smoking would it increase the smoke flavour or just dissolve into goo? Always looking for ways to increase the smoke ratio. Thanks for being awesome chef Tom :)
Are there any type of none "spicy" peppers that would also pair well? For example would green pepper also work?

You can order online. Lots of places sell it and ship frozen on dry ice.
Chef Tom, I have a question regarding the sodium content in your recipes. Besides the sodium that is in the rubs you use, how much additional sodium does the protein add to the entire recipe? One last thing, do you have recipes for people who are on a low sodium diet?
