The cooked one added is the common rice. Any yoghurt will do , it helps in the fermentation. The potash reduces the acidity , so baking soda ( soda bicarbonate ) can replace it if you don't have the potash . You may use a nonstick flat pan if you don't have the type in the video , but then it will be called sinasir . Hopefully, this was helpful .
