- COUNTY FAIR ORANGE CAKE🍊
Non stick Baking Spray with flour in it
1 (15.25 ounce) box Yellow Cake Mix
1 (3.5 ounce) box Lemon Instant Pudding
3/4 cup Orange Juice
1/2 cup Coconut Oil
4 Large Eggs
2 teaspoon Lemon Zest
Juice of Zested Lemon
ORANGE GLAZE:
1/2 cup SUGAR
1/3 cup ORANGE JUICE
1/4 cup (4 tablespoons) BUTTER
1 teaspoon Orange Zest plus more for garnishing
Melt the butter in a saucepan. Add sugar and orange juice. Cook Over medium-low for 2 minutes stirring. Remove from heat and stir in Orange Zest.
Preheat oven to 350 degrees F - 190 degrees C. Spray Bundt pan with nonstick Baking Spray with flour in the spray (Baker's Joy or Pam Baking)
In a large mixing bowl stir together the cake and pudding mixes. Add the Orange Juice, Oil, Eggs, Zest and Lemon Juice. Beat with a mixer on low to combine then on medium for 4 minutes. Pour batter into the prepared Bundt pan. Bake for 35 to 45 minutes until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes. Turn out onto a Cake Plate and let cool completely. About an hour. Poke holes all over the cake with a skewer or a meat fork. Pour warm glaze over the cake. Garnish with Orange Zest for serving.

Amy I grew up without air conditioning. No one had air conditioning, not in schools, businesses, etc. We didn't miss what we had never imagined. I was age 17 when I first saw a vehicle with air conditioning. I still remember how cool the air felt coming out the window. Love you Amy.
Glenda thank you so much for sharing your memory of air conditioning in that car with me. I loved it. When I first started elementary school it didn't have air conditioning. I cannot imagine kiddos these days having to try to live with that. They would think they were gonna die😄😑🙂💜

Amy I know all the hoops you need to jump through, just to get your loved one in a place for the therapy they need. We had to put my mother in for the help she needed. Yummy,yum,this looks so delicious. I like cakes with just a glaze...sometimes icing is a bit too much depends on the cake I think. I will definitely give this a try.
