Eating 1K kcal is not difficult, doing so with the right macros & having some fiber is, and you just nailed it. As always, great recipe! Thanks for sharing!
Josh! We need EVEN MORE of these BIG BOY 1000 Calorie Meals, these are SO GOATED. I always have them on rotation. I literally just made another batch of the Chicken Burrito Bowl.
love the fact that when you say fahrenheit, you also mention celsius, also see you do that with other measurements for everyone to understand and not to google what is what.
I'm on my first bulk. Since I found your channel I use your recipes to meal prep every week! Tasty, energetic, clean and super easy to cook! Just a great help dude
Great video! For those who can't stand cooked cauliflower cuz it tastes like literal farts - use yellow potatoes. Also - I can't eat dairy, so instead of cow milk and cottage chz and cheese shreds for sauce, I just use potato water, veggie broth (or plant milk), 2-4 TBS of tahini (or soaked cashews). I suppose you could use a block of plant based cheese to shred - but I just do not bother due to expense and using cashews makes is SO yummy. The sauce is GOOD when you can not use dairy. Enjoy! PS: add acidic element to the sauce as well - either lemon juice or apple cider vinegar (1-2 TBS) and I like spices so I add smoked paprika, garlic powder & onion powder in addition to the salt and pepper.
Josh, I have made many of your recipes, and at times make variations because I prep for food convenience and not dietary reasons. THIS one, was awesome. And my two year old daughter agreed without any arguments over eating veggies. It also froze very well and I will be making this one again soon. Thank you for all of your videos.🤙🏻
JOSH could you make a playlist of all the bulking meal prep videos because that would be awesome, love the content. Thank you for looking out for the lads 🙏🏿
I don't get it. You eat the same kinds of macros whether you're cutting or bulking, just less than your maintenance for cutting, and more than your maintenance for bulking. You still want to eat grilled chicken whether you cut or bulk. Vegetables whether you cut or bulk. Fruit if you cut or bulk. All of Josh's recipes also work for bulking, just fit an additional meal a day or divide one of the 5 portion meals into 4 containers instead to effectively get 25% more calories per dish, you'll just cook a bit more often. As he stated, this video could easily just be 500 calorie mac and cheese meal prep, just divide it into 10 containers instead of 5. This isn't rocket science. If you can add/subtract/multiply/divide to calculate your daily calorie intake then you have the math skills to comprehend this too.
I made this yesterday and it turned out great. I used whole wheat penne pasta with it for a little extra fiber. Thanks for the time spent researching these yummy big boy meals.
These have been a lifesaver. I used to be skinny as hell and tall and struggle eating more than 2k calories per day but have using these meals I’ve been eating 3k calories per day and have put on 40lbs of muscle the past 8 months and finally am sitting at 170lbs, 6’3” and don’t look like I’m one illness away from death. Obv combined with working out regularly but damn that progress was FAST thanks to these
As someone that hates cooking, but needs big boy meals just to survive (super high metabolism) I thank you from the bottom of my stomach. I'm going to be making this on the weekend for my dinners for the week.... and subscribing for the next recipe.
Thank you for the recipe brother! You are actually the one who got me into meal prepping, and made all the difference in my fitness goals! I've been using your dishes for both bulking and cutting, and this one is going next week for sure! Much love!
I eat a very high protein lower calorie diet, just the way it’s been for me, it’s what I like. These meals (specifically the bbq meatball one) have been perfect for my system. I eat 4 eggs any way in the morning, just depends on what I’m feeling. A light lunch, carrots and celery with some ranch or a salad, and then I eat a large meal at the end of my day. 320 calories for the eggs, 300ish for the salad, 900-1000 for dinner. Normally sticking to water. It’s been pretty helpful honestly. I just wanted to say all this just in case you’re not trying to bulk up, I’m already pretty built being 6’3” 225lbs. You can just enjoy a big meal guilt free guys. Love y’all.
I'm actually trying to use meal prep to help me lose weight, but I don't have a lot of time to eat bc of work. I got into a really bad habit of eating once at work (like garbage) and that's all. I'm really appreciative of this because it's actually exactly on the line of the Caloric and Macro levels I want for 1 of the 2 meals I plan to make to keep myself fed and try to get healthy. I know you market this as "bulking" but for those of us who can't manage 3 meals a day, this is a god-send and I am grateful. I've already stolen some of your smaller recipes and I hope you keep up the momentum.
as a chef I might have one little advice to make it taste even better. I would swap the red pepper for a celeriak, the taste profile will compliment the cheesiness and texture wise will be better than the pepper, try it out and let me know what you think :)
Made this tonight for dinner for my family. The flavour of the sauce was very nice with the roasted vegetables, and the chicken thighs were so moist and delicious. I noticed immediately how filling this is, after a few spoon fulls I was already feeling full. One thing that I might do differently for my own liking is use a different pasta noodle besides macaroni. Overall it was very delicious and satiating, thank you for the recipe! Still have half a pan in the fridge as leftovers lol
I like that vegetables were included in this recipe. A lot of people focus on protein and don't get enough of a variety of fruits and vegetables. I might have added some nutritional yeast for more extra nutrition and more cheesy flavor without adding the saturated fat, but overall I think it's a great recipe that I'm definitely going to give a try.
Really interesting that you blended the veggies with the cheese. Such a simple and effective idea but one that my non-cooking mind just would have never thought about.
Amazing, everyone is so focused on getting low calorie, high protein. When I am trying to gain weight I don't want to have to eat 6 low calorie meals a day.
I appreciate the big boy size. I'm a 6'0" 153lb lanklet trying to get back to a lean 172 and I have a lot of trouble getting in the cals with healthy meals. Liked and subscribed!
Thanks! This is perfect. I only eat one meal a day during my intermittent fasting protocol, and I find it challenging to meet a reasonable caloric intake and get the protein I need. If you go back and tag this video OMAD, it should drive some more traffic.
Dude, this recipe is about as legendary as it gets. I cant make mac and cheese without throwing some bacon in it but this recipe is like 99% as good as a traditionally rich baked mac and cheese recipe is. (And if you haven’t had a good baked mac and cheese, then you should make one for yourself and you’ll know). This is by far, one of the tastiest, macro supercharged, New Year’s resolutionist friendly recipes I have ever had. Mr. Cortis, you are Gods gift to UA-cam. Amongst the swathe of shitty meal prep channels there is, you sir are a diamond in the rough.
I liked your hidden veggie mac so I'm excited to try this. I like doin pastas in oven safe meal prep containers then baking em in the toaster oven with some fresh cheese grated overtop
As far as freezing, it’s generally better to freeze sauce and not noodles. Noodles that are cooked don’t freeze well. That’s not to say you CANT freeze this, but it will likely be a weird texture
DAYUM! I blinked and you blew up! It seems like just last week you were pulling the peanut butter and jelly oatmeal out of the oven like "Look at that lil bastard, look how beautiful that is." Nice job!
I still haven't made the Hidden Vegetable Mac and Cheese again yet. I'm thinking of melding the two recipes together. Like adding the cottage cheese to the original recipe to give it more protein and maintain the veggies.
Liked & subscribed!! Also wanted to comment… I didn’t even realize the usual roux mixture (butter & flour) was missing until you said it….no heavy cream, half & half or evaporated milk either! I’m looking forward to trying this!! Enjoyed your humor too but don’t give up on Cuisinart. You win some, you lose some!! 😂
This was a rough, tough cookie to swallow. I'm working with a very tiny kitchen in a Section 8 low-rent, low-income apartment complex but I got it done. Came out a little liquidy. I'll put less milk next go round.
I made both your big boy chili and hambulker helper and those turned out great. This one, however, im not a huge fan of. The vegetable taste was a bit too strong for me and i had to cover it up with a bunch of seasoning
Excellent! As I now must go gluten-free, i really appreciate these kinds of recipes. However, the one thing I must disagree on is the fact that you must never have had "organic parsley"? I say this because they're extremely large leaves and not like the store bought product you showbin video, and yes, they do have flavor.. not sure where you can get that, other than by growing it yourself. Be careful as they amplify via an exponential vine network! Two plants and i was overwhelmed by the end of the growing season.
Dude, I've been here since like 50k subs and just saw that you have almost 800k now!! Fucken a, top job my dude! Also the recipe looks delicious, I need to try it out
Dang. I remember following this account and Josh was living without furniture. Now he's buying cheese from Whole Foods. Stay winning, King! 😤🙌
Hahahaha I have a couch and no longer sleep on a twin mattress on the floor now too

honestly i haven't seen the elsa bowl in a while, so . . .

Whoop whoop that’s what I like to hear 🫡
protein pasta huge hack here might yield even more gains, could even half the portions for 10 meals and freeze

Hell yeah I just made this but substituted pre cooked chicken sausages instead of thighs. So tasty, I love the flavor of the veggies in the sauce

Great idea for incorporating vegetables into Mac n cheese. Hard to believe each portion is over 1000 calories. How big is each portion?
Large. Well over a pound of food
This looks absolutely delicious. And I love the hilariously savage commentary.
