Zucchini Cheese Muffin Slab - GREAT big batch recipe!

- This is a savoury cheese muffin with zucchini in slab form which is a handy big-batch recipe to serve lots of people without fussing with muffin tins (pain to clean!). An excellent shelf life of 5 days, economical to make, this will easily serve 15 to 20 people and is great to tuck into lunch boxes or serve for morning tea.

I might have to make a batch and freeze them. Reckon I’ll add some grated carrot.
I don't even like zucchini and I'd eat this. Might make a half batch, my wife likes zucchini and it might make her stop threatening to throw my baking pans out.
Why not? It doesn’t really have a strong flavor on it’s own. Haven’t tried cooking it like this, I’ll definitely try this next time i have some zucchini on hand. As a quick snack or side veggies, you can also cut them into slices like she did here and sear them on a hot pan with garlic salt and black pepper sprinkled onto both sides. It ends up being pretty tasty. If you don’t want them too floppy, you can cut them into thicker slices to maintain a bit of a crunch to them.
Damn - now I'm hungry! :)
Can i replace the zucchini with eggplant?
