  • Chef Eric Adjepong, Top Chef finalist, James Beard Award winner and Bowery Farming Culinary Advisor, is in his home kitchen making Coconut Chickpea Curry. Eric makes this quick and easy dish using pantry staples like canned coconut milk and chickpeas. He also blends Scotch bonnet peppers and vinegar together to make his own hot sauce, adding heat to the curry. He finishes off the dish with some fresh mustard greens and serves it with coconut rice, resulting in a satisfying and spicy vegan curry that is balanced by the subtle sweetness of coconut milk. Curry is what the colonizers called everything that didn’t fit in their cuisine 😅. It’s kind of taken over though. Japanese curry is its own thing for instance. So long as you know about the diversity, I think it’s really ok to call it whatever is most descriptive 🙂

    I also make chickpea curry but cannot afford 2 cans of Coconut milk, here they are sadly not cheap, so the other thing is maybe split the can of milk and use solid coconut and shred this (Also mustard leaves ver difficult to ome by here ) So I use Fresh spinach leaves which I grow ..Also I use a little lime juice in my rice and grated lime and chopped fresh coriander.
    Thank you as always great to watch food videos when one is hungry and For those thinking I have this for dinner, have it for breakfast, Curries are great no need to wait for lunch or dinner..
    Come away from a typical western Breakfast and eat steak and onions or Spinach and Garlic for breakfast ...Amazing the difference you notice when no longer eating Breads and cereals. . (Kick out the gluten for a month and notice a difference ) I did for 9 months and never felt healthier. .Breskfast ...Best meal of the day.

    Why are the measurements so different from the video to the recipes listed on the site via the link? He says 2 oz of vinegar for the hot sauce but the website has 1/2 cup. 2 oz is like 4 tbspns if I’m not mistaken. The site states 2 medium ones but what he has frying in the pan is way less than the entire 2 onions listed. Am I missing something here? No where in thew vid did he add sugar to the rice pot (This is the first time I’ve ever heard of adding sugar to rice) yet the recipe on the website states to add it. 🤷🏿‍♂️

    Mm-hmm, somebody's got some grocery shopping to do. Unfortunately, where I live, scotch bonnets, mustard greens and green onions are not available (yeah, I need to move). For the heat, can I substitute a chili pepper based hot sauce, such as sriracha?

    • @toad_house_homestead
      @toad_house_homestead 3 роки тому

      Sriracha will give a very distinct flavor and it may take away from the flavors you've built while making this recipe. I would suggest using any fresh hot pepper you could find. Usually most stores at least have jalapeños. If you're going with the fermented chili sauce (Sriracha) I would add that to your bowl sort of as a topping to see if you like the flavor instead of adding it to the whole dish. This is also very good without the habeneros completely.

    The only part I disagree with is sautéing in olive oil. Coconut oil would be a great choice for this dish for that extra coconutty flavor. Any other neutral oil would do better too IMHO. Olive oil doesn’t go well with these kinds of flavors. Otherwise, love the dish Chef!
