    To all those persons commenting that this is Indian not Jamaican, there is no disputing the fact that it has Indian influence, however, the taste is completely different. When I make an Indian chicken curry I use cardamom, cumin, coriander, bay leaves etc. The chef's use of scotch bonnet pepper, scallion, thyme, pimento is unique to the Jamaican style of cooking. I'm pretty sure if some of you went to an Indian restaurant and ordered a curry and got what the chef made you'd complain that it wasn't Indian food.
    At the end of the day good food is good food, regardless of where it is from.

      💯 Caribbean food has influences from all over the world. West African, Indian/Asian, and to a smaller scale European as well. Each country has their own twist. This is a Jamaican twist

      I completely agree, but however comparing it to "curry" that is served in Indian restaurants also takes away a lot of the influence as well. Because the majority of us don't make it like how they serve it in the typical Punjabi style. 9/10 our homemade chicken curry would resemble this than the one served in restaurants. This is Jamaican food but it also just as much Indian.

      Yup I agree with your assessment. I've partied with many Jamaican and Trini friends, their curries are diff to what I bring/make. In the end, it's all good food and I'm happy to eat it all

      A lot of food Jamaicans love is from Polynesia - breadfruit, noni... And in turn, the first pineapples taken to Hawai'i were from Jamaica. Thank British colonialism (sarcasm)

      there's Indian influence? Is that why he "burns the curry" or what Priya from BA calls "blooming the spices" or smth which seems to be an Indian technique? I could be way off and it could just be more standard of a technique than I thought but it seems interesting

      @@UlquiorraRocks1997 curry is an Indian cooking technique. Roti is Indian bread. Plain rice is an Indian way of eating rice. Rice and peas (or beans), how Jamaicans usually eat rice, is African.

      ​@@UlquiorraRocks1997 Hello frm India, ths process (burning the curry) is generaly not used for curries, mostly some times and in some parts of the country to tempure (tempuring) lentils (Daal). Ths will add flavour of the spices to the Oil thus to the whole dish.
      We add onion to the hot oil fry till golden brown, add chillies,garlic, onion n fry, add tomatoes n then add ground spices one by one . The tomatoes added earlier prevents the spice powders from burning anf then keep stirring the mixture(curry base) for about 45 minutes- keep adding lil bit of water time to time, till it starts releasing oil. This process is crucial for the taste of the Curry (most so called Restaurants " dont do it properly and use cheap methods to have a lot of carry base). Thn add chicken cubes n keep stiring the cubes and base mixture for another 20-30 mins (depending on the size of cubes) till the chiken pieces are almost cooked. Add warm water as per your perferance ,let everything boil . Add Garam Masal, stir and remove from fire. Keep aside for 1-2 hours , then serve with white boiled rice or Phulkas(rotis)/Paratha/Naan/Kulcha/dosa/Idli.
      What he made here is a Paratha not a Roti.

    To anyone who's not Jamaican: the sugar he's using is not the brown sugar you buy at the supermarket (i.e., it does not have a high molasses content; you can tell by how it falls into the bowl and it has a granulated look).
    If you go to a Jamaican store you will find it labeled as brown sugar however.
    I think it's best described as turbinado or Demerara although I'm not quite sure which one it is. There's a brand called Florida crystal that it's Demerara and it looks pretty close to the one used in the video.

      To be fair Bobby Flay is a pompous, overrated ass who could beat maybe Paula Deen or the copper pan lady in a cooking competition.
      He's no match for this dude. I mean, look at how he used the parsley as a pastry brush.

    I made this for dinner, with avocados and cucumbers. I also made mango ice cream from scratch to go with a plain vanilla cake. I seasoned my chicken overnight. It was delicious.

    one of the best curry recipes i've ever tried. I couldn't find the curry powder he uses so i made it myself by googling the ingredients. my only change was the addition of peas. So good!

    I made this today and instead of scotch bonnet I used habanero pepper honestly it tasted like something my mom made. She used to make this when I was a kid and I never knew how to make it. Thanks for the recipe my boyfriend loved it too.

      Lisa Williams no it’s not.
      The Scotch Bonnet and Habanero are actually cousins! Both are a variety from the Capsicum Chinese chili plant. However the Habanero was domesticated in the Amazons and eventually found its way to Mexico and South America, where it is most popular.
      Scotch bonnet and habanero peppers are both seriously hot peppers with a similar fruity taste. The difference is that Scotch bonnet peppers have an additional sweetness that contributes to the overall flavor.

    Currently making this recipe (I marinated the chicken overnight), I did add coconut cream to the pot for a little extra creaminess. It smells SO GOOD in here. I can't wait to finish the Roti so I can go IN!

    Made this, can confirm that's it's a game changer. Frying the curry powder for 30 secs before adding the rest of the ingredients makes a HUGE difference. This will be in regular rotation moving forward

    I prepared your chicken curry today, exactly following the recipe - it turned out incredible delicious! This will be eaten from now on often in my house...we love it. The cooking of curries here in Sri Lanka is quite similar, but the addition of fresh thyme and allspice is new to me.

    The roti needs oil to be incorporated into the dough with the addition of the water to have a tender roti. I made the roti on the video and it was dry after I cooked it. Just a friendly tip. :)

      @@rads3586 Nah, there are flavors there that are unique to Jamaican curry specifically. I’ve had Nigerian curry, Indian curry, Guyanese, Ghanian, Trini, Thai curry, Japanese, etc. and Jamaican curry really has its own thing going on.

    that roti though 😂 it looks just like how my mom made it but her technique for the dough was different, she did not oil the dough, but only oiled it once on each side while it was in the pan.
    In, oil one side, flip, oil the other side, flip, done. and then she'd slap the roti into flakey bits with her bare hands 😁.
    She would make twice as much roti's (in case someone showed up uninvited 😅). we would eat the leftover rotis as breakfast the other day. we'd dip the roti in tea and eat it 😛

      It needs to have an acid in order to be a marinade. Plus since the chicken isn't thick and it is all stewed together, the "marinade" does not do anything. Just stew all the ingredients together for the same final product.

    In Malaysia, we cooked chicken curry using coconut milk but there’s also people use yogurt and that is also delicious but Jamaican version looked so good I would like to try to make it. The roti, the rice, the chicken curry at the end all of it look so delicious 👍🏼

      in Jamaica coconut milk is used in a dish called Run-Down but it takes a longer time to prepare and usally made with fish.
