Tomato Pasta Salad recipe - missing summer while in fall

I love Alison Roman’s recipes. And so when I saw her make this secret ingredient pasta salad, I had to give it a try! It’s so flavorful with the tangy sweetness of the tomatoes paired with the vinegary crunch of the red onions and capers. It then gets mellowed out with the pecorino and the tiny kick of red pepper. There’s so much going on in this pasta salad which makes it fun to eat with each bite. Also, the secret ingredient is sun dried tomatoes! Haha

Ingredients:
1 pound pasta (rigatoni)
Olive oil
6 garlic cloves, thinly sliced
Crushed chili flakes
2 pounds tomatoes
Red wine vinegar
1/2 red onion, sliced
2 tablespoons capers
2-4 ounces pecorino, chopped
Salt and pepper

I use pasta water on my plants! The starches leftover in the water are quite beneficial, but you must use unsalted pasta water

I would add Spanish olives to this and eat it hot. For a pasta salad, a smaller pasta might work better.

I definitely was craving some olives in this as well! I followed Alison’s recommendation of using rigatoni and I didnt mind the pasta being so big in the pasta salad haha. But a smaller one would be delicious as well :)
