I love that you keep it real and don’t edit out things like saying you’re making it for the oven, forgetting the sugar, or dropping a muffin. I think that is one of the reasons you are the only channel that I never miss a video. You show real life and inspire us to try new things, and if the pancakes are too dark, or we don’t have the correct ingredients, it’s okay to shrug and chalk it up to a learning curve, or adapt and try a substitute ingredient. Becky, the center of your stove is made to put one of those griddles (your new griddle )on so it’ll have a bigger circle of fire underneath it. I don’t know how to describe it but that’s what the center of your stove in your new house is made for.
A tip for your lovely muffin pans: if you put a bit of water in the empty muffin cups (that you didn’t have enough batter to fill) it will keep your pan from warping on the bottom. Those carrot muffins look delicious.

That's how I was taught ! Carrots zucs anything bananas to be used up Pecans in the muffins and sprinkled on top. No sugar we used homemade applesauce.!

I was laughing when I saw you working that spatula to take every single little bit of the muffin batter! I do the same thing. I can't stand it when I see people leaving quite a bit of batter or whatever they are cooking in the mixing bowl and they put it in the sink. It's like "noooooo! What are you doing!! 😱" LOL!

I am disabled and my family get some of our food from Food pantries and I don't always know what to do with some of the ingredients. Watching you has gotten my brain moving about looking for recipes that include ingredients that I don't normally cook. My family love pumpkin pie and we have a can of pumpkin in the cupboard. I already was thinking about doing breakfast for dinner and making pancakes tonight so I think I am going to look up this recipe and make pumpkin pancakes!
A few years ago I bought some cardamom. (I can't remember why. Maybe Mango Lassi?) Anyway I add it to anything calling for pie spice now. It's also in a more distinctive container than my cinnamon so sometimes I just substitute one for one with whatever I find first.
nutmeg and mace come from the same tree. mace is from the outer aril of the seed, and nutmeg is the dried seed kernel. The first pancakes are usually darker because of the extra oil on the griddle. The rest should come out better.
Hi Becky, hi friends! Coffee and a new video. Becky my favorite eggplant 🍆 recipes are balangy choka (roast in the skin with garlic, scoop out "meat", stir fry with herbs. Its usually eaten with roti or flat bread. or chop and cook with ground beef.
I make something similar, called squash confit. I cut the zucchini in thin slices and lay dem a little overlapping in a pansheet. Drizzle a couple of tablespoons of oil over, chopped garlic and prefered herb (I love lemony thyme, gives it freshness). Put a parchment tightly against the zucchini and then bake in the oven (forgot the temperature, guess at 347 F) for almost one hour, take away the parchment paper and let it roast a little, keep an eye on this moment. Keep it in the fridge for up to a week. Delicious on a sandwich, as side for meat, fish, veggie dish...suits everything.
@@leisaann does sound delicious my mother use to fix them in butter with yellow squash and green onion. With some salt and pepper. She also made them by slicing them in circles layering them in a casserole pan and use tomato sauce and parm on top of each layer. To me it reminded me of pizza in taste. We would even put them in salads or breads. Both my parents were raised on farms

Even when she freezes chicken breast that she prepped for crockpot suppers with the sauce, spices, etc. Just the cooking is needed to do on those. But she will double a casserole and freeze the extra to pull out for a fast reheat. Certainly, those are not leftovers?
I completely aspire to be like you. My current situation is that I live in an apartment and I don't have the storage to do this on your scale. However you get my mind working and I'm going to figure out how to do it on my scale
We have that type of stove the center big burner is for what you’re doing exactly if you just move it over to the center of your stove and our stove came with a griddle that fit perfectly in the middle of the stove

I’m allergic to squash in all forms so I can’t eat most of these things, but I still watched every minute! I make banana bread oat flour pancakes every week and bake them in a quarter sheet pan, and cut them into squares, it’s much faster than cooking individual pancakes. I make a cream cheese topping for them. They freeze really well.

Vitamix has a container that is specifically made for dry ingredients. I have one and it grinds oats much finer than the regular container. It's worth the investment .
The outside husk of the nutmeg is called mace. The inside nut is called nutmeg. My Dutch mother in law (war bride from Eindhoven) used nutmeg on vegetables. Try it on cauliflower... yummy 😋

I myself think that applesauce been a good replacement for apples I knew you canned some! That been good in carrot muffins!! Take a wide mouth canning funnel cover your muffin pan vat with funnel than spray with non stick spray to save on mess and Spray!
Tamales are an act of love! I made these for my brother in law who had been diagnosed with colon cancer. Going through chemo was difficult and I would make whatever he wanted! I learned to can ham and beans because one pint was enough for 2 meals for him. The tamales were chicken or pork with red sauce.
Every year I make and can homemade salsa when I get an abundance of tomatoes and peppers from the garden. Last year there was also too much zucchini so I shredded it and added it to my salsa. Now I will always want to include it in my salsa recipe. It adds a unique sweetness along with a nice texture and it tastes incredible!
Love all your recipes! It is so much fun to watch you cook and create! I love using a griddle on the stove. I have a stove top like yours but I always use the 5th burner in the middle for the griddle. BUT it's hard to use any other burner at the same time because of space. Maybe next time, I'll try going across two burners instead. Then I can use the other side of the stove. 😊
I have switched all my cast iron to carbon steel and I love it! I’m so glad I made the switch. Carbon steel cooks like cast iron but is a fraction of the weight.
Zucchini is great added as a layer in lasagna and also in the filling for stuffed shells. I've added it to quiche also. It's very versatile. Great way of adding vitamins! And sort of hiding them!
We love it when you talk to us like we are sitting in your kitchen. When telling us how wonderful something smells or tastes, it’s not necessary to pause for emphasis before you finish the sentence. “This already smells - Pause - so delicious.”
Zucchini- just cooked it a cool way - air fryer. I cut the zucchini thick slices ( I cut into quarters as well, since the ones I had were pretty big). Put in a bowl, add avocado oil, salt, pepper, garlic, and parmesan cheese. Then air fry till your doneness.

When I use pre shredded frozen veggies, I have found it is best not to drain. The recipes based on fresh shreds usually account for the moisture in the veggies coming out in the baking process. When I tried both ways, the drained ones produced a dry baked good. I need to do a freezer meal stock up! Thanks for sharing your process!
Great recipes ! For the pancakes, usually, when I make those I use them as buns, with whatever protein you like in it, such as eggs, sausage or bacon and then I just wrap each individual sandwich and it’s ready to go.

In Australia, we call those little pancakes, pikelettes. A pancake, in Australia, is the size of a bread and butter plate or small dinner plater. Similar size to a crepe. They all look yummy, but better in the tummy. 😋❤️🙏🇦🇺
You probably have the perfect climate for carrots, plus a good sandy soil is best also, we have sandy dirt here which grows root veggies beautifully, I'm just doing potatoes, onion, tomatoes and green beans because I'm afraid its going to be a horribly hot and dry summer again, our asparagus is doing beautiful so far got a few messes for the freezer as well as having grilled a couple rounds for dinner. Best of luck in the garden this year.

I purchased a stove like yours recently. The stove came with a grate in the middle but I ordered the griddle that will enter change with the grate. I use the griddle so much I never put the grate back in. You might want to look into getting one. It’s very convenient. I enjoy watching you cook and look forward to new videos every day.
Becky, these recipes looks so good! I’ll try these pancakes sometime. Since carrot cake is your favorite cake, try making a carrot cake where you blend the carrots with the wet ingredients then mix to the flour (use a good quality flour so it doesn’t brown it). Then top it with a chocolate type of frosting (not regular frosting) that it crackles. It’s an amazing combination and taste. I can give you my family’s recipe if you’re interested. 😊

I purchased a gallon of peeled garlic today for $15 and went back and used your old garlic preservation video to start using it up. Glad I remembered you doing all these interesting things with garlic. I just had to wait until the store had it available again. I normally do the frozen pucks but wanted to do something different this time. Looking forward to cooking with the infused oil.
An interesting thing about nutmeg....it is two spices in one. The outer shell is ground to make Mace. And the inner nutmeat is Nutmeg. I dont think they taste the same

I started making baked oatmeal once a week, once Becky did it. Breakfast is so easy and better for me.

I have switched all my cast iron to carbon steel and I love it! I’m so glad I made the switch. Carbon steel cooks like cast iron but is a fraction of the weight.
Good to know as yes cast iron is so heavy and I might make the switch .

Zucchini is great added as a layer in lasagna and also in the filling for stuffed shells. I've added it to quiche also. It's very versatile. Great way of adding vitamins! And sort of hiding them!

We love it when you talk to us like we are sitting in your kitchen. When telling us how wonderful something smells or tastes, it’s not necessary to pause for emphasis before you finish the sentence. “This already smells - Pause - so delicious.”
I think the pause is to smell or taste the thing.
Her pauses are as sweet as she is, and I for one, do not mind that sweet way she has about her.
Zucchini- just cooked it a cool way - air fryer. I cut the zucchini thick slices ( I cut into quarters as well, since the ones I had were pretty big). Put in a bowl, add avocado oil, salt, pepper, garlic, and parmesan cheese. Then air fry till your doneness.
forgot to mention, that the hubby wanted to eat a whole plate of them!! :)
When I make baked oatmeal, I sub half the milk for apple butter. So good.

When I use pre shredded frozen veggies, I have found it is best not to drain. The recipes based on fresh shreds usually account for the moisture in the veggies coming out in the baking process. When I tried both ways, the drained ones produced a dry baked good. I need to do a freezer meal stock up! Thanks for sharing your process!

Great recipes ! For the pancakes, usually, when I make those I use them as buns, with whatever protein you like in it, such as eggs, sausage or bacon and then I just wrap each individual sandwich and it’s ready to go.

In Australia, we call those little pancakes, pikelettes. A pancake, in Australia, is the size of a bread and butter plate or small dinner plater. Similar size to a crepe. They all look yummy, but better in the tummy. 😋❤️🙏🇦🇺

You probably have the perfect climate for carrots, plus a good sandy soil is best also, we have sandy dirt here which grows root veggies beautifully, I'm just doing potatoes, onion, tomatoes and green beans because I'm afraid its going to be a horribly hot and dry summer again, our asparagus is doing beautiful so far got a few messes for the freezer as well as having grilled a couple rounds for dinner. Best of luck in the garden this year.

I purchased a stove like yours recently. The stove came with a grate in the middle but I ordered the griddle that will enter change with the grate. I use the griddle so much I never put the grate back in. You might want to look into getting one. It’s very convenient. I enjoy watching you cook and look forward to new videos every day.

Becky, these recipes looks so good! I’ll try these pancakes sometime. Since carrot cake is your favorite cake, try making a carrot cake where you blend the carrots with the wet ingredients then mix to the flour (use a good quality flour so it doesn’t brown it). Then top it with a chocolate type of frosting (not regular frosting) that it crackles. It’s an amazing combination and taste. I can give you my family’s recipe if you’re interested. 😊

I purchased a gallon of peeled garlic today for $15 and went back and used your old garlic preservation video to start using it up. Glad I remembered you doing all these interesting things with garlic. I just had to wait until the store had it available again. I normally do the frozen pucks but wanted to do something different this time. Looking forward to cooking with the infused oil.
An interesting thing about nutmeg....it is two spices in one. The outer shell is ground to make Mace. And the inner nutmeat is Nutmeg. I dont think they taste the same
