Very, very interesting video. Thank you! I'm just getting started with colour grading and people always talk about DLog, and less about D Log M. This is a great explanation.
If you don't want to do any color grading and you don't want the lower saturation/lower contrast look of D-log m then you would use the standard/normal color modes. Things like dlogm, log, hlg are more suited if you want to color grade when you edit.
I was using D-LOG M And was not getting good enough results, I will try HLG and document my findings here. What did you feel personally cooler grading the two ? Did HLG offer much more ease and capacity to colour grade. ?

Great Video. Even though everything stated is right, I would not use HLG. The colors one gets even after a color space transform are off. They are way too saturated, and the skin tones are too reddish. A big amount of time has to be spent color grading with every clip to get things right. Besides that, the EV meter of the pocket is optimized for Dlog m. I got a lot of times blown out highlights with HLG even though the lightening was at EV 0. HLG is clipping one stop faster than d log m. All in all, in my eyes, HLG is not worth the hustle. There are too many downsides.
D-log M is Rec 709 it’s not a real log profile like S-log 3, N-Log, V-Log, etc..
So better to choose HLG Rec2020
