Fabulous! I cook for the elderly in an Assisted Living development and often make coleslaw from scratch. I'm going to be sneaky and do this one next time. None of the owners are plant-based consumers so I'll be excited to see how they respond.

I guess it's not traditional but I would add a diced apple or some raisins to this. I like a little sweet with all the acid. Although I guess you do have the blended date in there.

Hi Lisa, I would say they are probably right. Oil for sure is out. In the beginning of our journey we followed Dr Fuhrman’s book Eat to Live and he says to limit yourself to 1 once of nuts and seeds a day if you are trying to loose weight. Once you get to your target weight, then you can indulge a bit more. It worked for us.

The Whole Food Plant Based Cooking Show thank you for your reply and feedback. I’ve been avoiding all fats, but today I ate a small amount (like 100 calories worth) of pistachios, and also had about 1 Tbsp of organic, freshly ground peanut butter with nothing else added from Whole Foods. It’s amazing how much more satisfied I feel just by adding those things in. I will try the recipe ;-).
