- Ingredients:
1/4 lb of sliced beef
flat rice noodles
1 tbsp of sweet soy sauce
2 beaten eggs
2 cups of Chinese broccoli cut into bite size pieces
1 medium carrot sliced thin on a diagonal
2 tbsp of chopped garlic
cornstarch solution (mix 1 1/2 cup of chicken broth and 2 1/2 tbsp of cornstarch)
Beef seasoning:
1 tbsp light soy sauce
1/8 tsp of baking soda
Seasoning sauce:
1 1/2 tbsp of oyster sauce
1 tbsp of light soy sauce
1 tbsp of fish sauce
1/2 tbsp of sugar
1/2 tbsp of chicken bouillon
1/4 tsp of msg (optional)

how come every time i try to cook the noodles it turn into pieces
What kind of noodles do you use? Is it fresh or the dry kind?
fresh, same exact ones. everytime i stir fry it with the eggs and soy sauce it'll just fall apart. by the time i put it all together its no longer a noodle , its all in pieces
If you cut the noodle into large pieces it will help. When you add the eggs gently fold it in. Make sure your heat is on the high. This part takes 1 minute or so to soften and char the noodles.

Your pan needs to be well oiled and very hot.
