Used thinly sliced London broil - kept the marinade on for about 20 minutes before mixing in the oils. Meat was so tender and delicious. Well, Stacey, this recipe will revolutionize my kitchen. Thank you.
1. Half freeze the beef after cutting into long rectanglular prism with the grain running the length of the prism. Makes cutting thin shingles or rectangles way easier. Just needs to be firm to touch and not floppy, holds shape. 2. Marinade needs very little time when seasoned this way, too long and it becomes too salty. 10-15 minutes max. Also use very little baking soda as it can leave an odd aftertaste if you use too much. Quarter tsp enough for the amount of meat she uses. Since you are cooking over standard stove sesame oil should not burn off its flavours but you can also add a few drops after cooking too. 3. Stir fry in a wok or standard cast iron, steel pan just preheat on high until steam and even a touch of smoke comes off the metal. Takes 30 seconds to 2 minutes depending on heat source (electric vs fire vs induction) and thickness of metal. Thin coat of oil (approx. 1 tbsp) and heat till shimmering. Everything Stacy says is solid.

I went to a Chinese market to get the fresh chow fun. I decided to search youtube for a recipe. Yours was the first one that showed up, and it looked exactly like how it looked at the 99 Ranch Market. I decided to make it this morning and it tasted very similar, but next time, I'll probably add a little more dark soy sauce to make it look a little darker. I made this recipe and was amazing! The only change I made was to add some chilli oil to the soy sauce mixture to make the rice noodles a little spicier and it was fantastic!

I have diabetic people in my family and don’t know how excluding sugar would affect the taste and texture of the recipe. Can I use substitute sugar in the recipe, or just omit sugar? Let me know what you think.
I would just skip the sugar. The amount of sugar I use is small, and if the dish is shared by three or four people, each person gets tiny amounts of sugar.
