    I just made it all as you showing (noodles from scratch and they are very good)and eating it now. It came out perfect as I used to have take away in Sydney but now I am in Poland. I can stop dreaming about it and just do it. One of my favorite dishes. Thank you 😊😊😊

    Used thinly sliced London broil - kept the marinade on for about 20 minutes before mixing in the oils. Meat was so tender and delicious. Well, Stacey, this recipe will revolutionize my kitchen. Thank you.

    1. Half freeze the beef after cutting into long rectanglular prism with the grain running the length of the prism. Makes cutting thin shingles or rectangles way easier. Just needs to be firm to touch and not floppy, holds shape.
    2. Marinade needs very little time when seasoned this way, too long and it becomes too salty. 10-15 minutes max. Also use very little baking soda as it can leave an odd aftertaste if you use too much. Quarter tsp enough for the amount of meat she uses. Since you are cooking over standard stove sesame oil should not burn off its flavours but you can also add a few drops after cooking too.
    3. Stir fry in a wok or standard cast iron, steel pan just preheat on high until steam and even a touch of smoke comes off the metal. Takes 30 seconds to 2 minutes depending on heat source (electric vs fire vs induction) and thickness of metal. Thin coat of oil (approx. 1 tbsp) and heat till shimmering.
    Everything Stacy says is solid.

    Looks tasty and nice color. This recipe always made by the wok.Traditional Cantonese or Hong Kong pepole desire the "wok hey" flavor from the dishes that cook in the way of"Chow" .😂😂😂

    This looks delish! Beef Chow Fun is my favorite Chinese food. It doesn’t hold up real well as a leftover, so the idea of preparing it fresh at home is terrific. Not sure where i can find fresh rice noodles in the small town I live in, though. If I can find some somehow, I will definitely make this recipe. Thank you!

    I would make a special trip once a month to the buffet inside the 99 Ranch Market just so I can get the beef Chow Fun. The last time I went, I asked the server how they make the Chow Fun sauce so delicious. She told me the chef uses soy sauce, oyster sauce, green onions, and onions. I went to a Chinese market to get the fresh chow fun. I decided to search youtube for a recipe. Yours was the first one that showed up, and it looked exactly like how it looked at the 99 Ranch Market. I decided to make it this morning and it tasted very similar, but next time, I'll probably add a little more dark soy sauce to make it look a little darker. I also used your tip for the bean sprout, they looked so much better! I subscribed to your channel and hopefully will make some dishes that you posted! Thank You! You saved me money by making it myself.

    Thank you Stacy for your detailed explanation. My only concern is using sugar in the recipe. I have diabetic people in my family and don’t know how excluding sugar would affect the taste and texture of the recipe. Can I use substitute sugar in the recipe, or just omit sugar?
    Let me know what you think.

    • @COOKSTACEYCOOK
      @COOKSTACEYCOOK  7 місяців тому +1

      I would just skip the sugar. The amount of sugar I use is small, and if the dish is shared by three or four people, each person gets tiny amounts of sugar.
