    Healthy Fluffy Low Carb Pancakes
    Serves 1
    Extremely thick and fluffy pancakes which are low in carbs and healthy too! These low carb pancakes are loaded with protein (without protein powder!), fiber and with no sugar whatsoever! Naturally gluten free, paleo and with a tested vegan option!
    For the pancakes
    3 T coconut flour
    1-2 T granulated sweetener of choice
    Pinch baking powder
    Pinch sea salt
    3 large egg whites (for vegan option, use 1 T + 1 tsp Ener-G egg replacer + 1/3 cup water, set OR 3 T flax + 9 T water)
    1 T mashed pumpkin OR applesauce OR mashed sweet potato
    1/4 cup + dairy free milk
    1/2 tsp vanilla extract
    Coconut butter vanilla glaze
    1 T coconut butter
    2 T dairy free milk
    1 T granulated sweetener of choice
    ½ tsp vanilla extract
    Instructions
    1. In a large mixing bowl, sift the coconut flour, granulated sweetener of choice, sea salt and baking powder to avoid clumps. Mix well to combine.
    2. In a small bowl, whisk the egg whites very well (can be until stiff peaks form- This makes them even more fluffier than pictured!) or flax egg with the vanilla extract. Add to the dry mixture, along with the mashed pumpkin. Using a tablespoon at a time, add dairy free milk until a thick batter is formed. Mix lightly, but do not over mix.
    3. Spray a pan with cooking spray and heat on low/medium. Once pan is extremely hot, pour batter using a 1/4 cup at a time. Cook pancakes for 2-3 minutes or until the edges bubble, before flipping and cooking for an extra minute. Repeat until all the pancakes are cooked.
    4. To make the coconut butter vanilla glaze, whisk all the ingredients in a small bowl and top pancakes. Add sprinkles if desired!
    Notes
    For best results, cover pancakes while they cook.

    Yep, the carbquick tastes like bisquick to me. I love that stuff on occasion. It's cheating to me but I'd rather cheat with carbquick than regular white flour. Makes excellent breading for fried zucchini!

      Carbquick is also great for batter for frying chicken - it's fantastic. I've seen some videos where this doesn't seem to trigger blood glucose much and doesn't knock them out of keto. I agree that it's a cheat in that I won't use it every day, but I don't see why not to use once a week or so.

      @Tangie Lynne Atkins also makes a low-carb bake mix that's 5 net carbs. I believe you can get it on amazon. I think they also have the recipe on their site.

    You do not have to have anything against Carbquick. It is what works for each of us individually. I have it in my amazon cart (put it there before watching this) and am gladly purchasing.

    Carbquick rules. I make mine 1/2 CQ and 1/2 with Almond Meal, with eggs, some flax, oil, water, cinnamon and nutmeg, and extracts (van/orange/maple). Add berries or chocobits. Yum

    Another awesome video! If you're really put off by the aspartame in the syrup, I'll tell you my alternative, but it will probably only be good to those people who love the butter pecan syrup at IHOP. I use the Torani sugar-free caramel syrup that I also use to sweeten my coffee sometimes. It isn't thick like pancake syrup, but I love the flavor. I've been thinking of mixing it half and half with my FiberYum to thicken it up. Also, I can't help but wonder how many of your southern subscribers like myself heard you say pee-pie :) For those who have never heard it, it is the southern version of peek-a-boo. Thanks again, Wes. We all love you and your wonderful sense of humor puts a smile on my face every time.

    I personally LOVE carbquik! And, huge bonus, my son eats everything I’ve ever made with it so we were able to switch over to it completely. He doesn’t like any other low carb flours so that makes it hard to keep sweets around the house for me. With carbquik I can make anything I want and he can enjoy it too. My husband will eat just about anything so he was easy to switch over. The kid, not so much. So I’m happy to have found carbquik.

    Wes, so glad you did the Carbquick! I adore it and even though it’s not “keto” I enjoy maybe using it once a week to kill the pancake and biscuit craving!! I can’t stand any of the recipes I’ve tried so ok to splurge on a low carb product in my opinion. Love your channel BTW!!

    As a beginner,(8th day) I think that what you are doing is fantastic! It will help me to choose which recipes to try without wasting a lot of time, money, and effort on a mediocre/poor result. I also like that you link to the original recipe, which is very genuine of you.       Highfalutin' Low Carb definitely taste just like syrup it’s crazy. It’s more watery in texture than traditional. Worth the higher cost for guilt free eating

    FYI: The link in the description for this video above for the Big Man's World Healthy Fluffy Low-Carb Pancakes recipe shows an ingredients list that is different from what's in this video. Maybe the author has improved it. There's no pumpkin puree, but he mixes the coconut flour with almond flour instead. He also makes use of the egg yolks, so the recipe is quite different now.

    Wes, I am impressed. I have found your channel about a few weeks or a month ago and I have been watching constantly. I find that most people who are trying to cook healthfully or people who are doing substitute videos just kind of cook for their own reasons. They might just be following recipes for their diet and that might be why they just do as they are told without the knowledge for what they are doing. You are very good. You always explain the process and the choice of ingredients correctly. Not only do I gather you have a very good base of knowledge for regular cooking technique, but you also seem to really understand the science behind the alternatives for the dietary reasons as well. Your very practical. I love the format and the idea for your channel. I don’t think I have found anything else quite exactly like it on UA-cam before. Keep it up!

    It appears the Big Mans World recipe has changed. No pumpkin now but includes almond flour and coconut milk! Also has liquid stevia. It's actually a very different recipe!

    The first video of yours I watched was the keto ketchup. At first, I wasn't sure about the length, format and flair of your videos.
    But after realizing I just watched, well, 90% your videos - I gotta say you do a great job and you actually make me laugh with your little quips and personality.
    In hindsight now I think of it, tasting and comparing recipes is actually a brilliant format for people like me, who research the F out of anything I want to try.

    I wasn't impressed with the cream cheese pancakes either lol. Would rather just not eat them. I do however use them as crepes with some whipped cream and a few strawberries and its good. But as a pancake nuh uh. Great vid 😊

      depends on where u are, i guess when u search for pancake recipes be sure to add "american pancakes" because those crepes that you call em are actually what we call pancakes in most of europe =) The more you know *rainbow magic stuff fade away*

    Carbquick has put joy back into my life for when I crave pancakes/biscuits/pizza. Yes, it's dirty keto, but if it's not every day, and you're not having to be a purist, it's fabuloso.
    Keep up the great videos. I appreciate your practicality about keto. We don't need another "THIS IS WRONG FOREVER!" keto channel out there. As for treating your viewers as if they were friends in your kitchen, your personality and sincerity put you whole ladders above so many other keto channels out there.

    Could you post the actual recipe you used for big man's world? The Link in your post is not the same recipe as you made in your video. The link in your post is called vanilla pancakes and has almond flour in it and no pumpkin at all. I would really like to know the actual recipe that you used. I've been looking for a coconut flour pancake that's actually not flat and gross

      Hi, everyone. Unfortunately, it appears Big Mans World changes their recipe at some point after I filmed this. I have reached out to them and hope to either get them to put the older recipe back online or allow me permission to post it here. I’ll update the video description as soon as I know more. I’ve looked through my notes but cannot find the original recipe, either. :-(

    Wesley, this is the second video that I was able to check out of yours and I love pancakes. Btw my name is Chris. I wanted to tell you this. I'm a type 2 diabetic very bad. I used to do Paleo years ago, but the grass fed meat was expensive for me so I stopped and my diabetes got very bad. The right before New Years my diabetes got really bad so I decided to really make a change. I decided to do Paleo again, but somebody told me about Keto diet how is more of modified version of Paleo and a bit more effective as I'm looking into it more. I need to lose weight and get my diabetes under control. I'm very thankful for finding you on here. You're hilarious and very a very nice guy and I'm thankful you review these recipes. I greatly appreciate it. You Rock! I actually died laughing with the "tastes like cheesecake bites" when you tried them. LOL. Tbh I think those would be better as crepes. Thanks Wesley for cheering me up :)

      Thank you so much for answering my question about type 2 diabetes and the keto diet. I was diagnosed 2 weeks ago and am on medication, but my A1C is not terribly high. My blood sugar was near 300 during routine blood work. Not good. I am going to try the keto diet. Love these videos! Keep them coming!!!

      Yeah I think you're better off doing the keto definitely I'll tell you something the thing you do have to watch out for is high ketones which is ketoacidosis but as long as you monitor your sugar and it's in range if you have high ketones using the urine strips that measures to ketones just watch out for those cuz you don't want to go overboard with that but I hope and wishing you that you got it under control good luck!

      Thank you PicantesWorld77! I am so new to all this. My doctor did not say to test blood sugar yet, just an 1800 calorie a day diet with some modifications. I will be retested in 3 months to see where my A1C is at and go from there. I will definitely take your advice and watch for ketoacidosis. I also am new to the keto diet so any information on what it is all about would be awesome! Best in your endeavors also! - Silver

    I ❤ this guy and his commentary. His personality is a winner! I use Joe Duff’s almond flour pancake recipe and I find it perfect. Everyone in the family loves it. It’s very filling, so one or two will fill you right up. But it’s always good to have a few extra recipes in your repertoire.
