In cooking, a sauce is a liquid, cream, or semi-solid food, served on or used in preparing other foods. Most sauces are not normally consumed by themselves; they add flavor, moisture, and visual appeal to a dish. Sauce is a French word taken from the Latin salsa, meaning salted. Possibly the oldest recorded European sauce is garum, the fish sauce used by the Ancient Romans; while doubanjiang, the Chinese soy bean paste is mentioned in Rites of Zhou in the 3rd century BC.
    Samosas accompanied by four sauces
    A chef whisking a sauce
Sauces need a liquid component. Sauces are an essential element in cuisines all over the world.
Sauces may be used for sweet or savory dishes. They may be prepared and served cold, like mayonnaise, prepared cold but served lukewarm like pesto, cooked and served warm like bechamel or cooked and served cold like apple sauce. They may be freshly prepared by the cook, especially in restaurants, but today many sauces are sold premade and packaged like Worcestershire sauce, HP Sauce, soy sauce or ketchup. Sauces for salad are called salad dressing. Sauces made by deglazing a pan are called pan sauces.

About learning Catalan at 600-700 range, I tried that. Basically what happens is you let something through early because you don't know how to keep the position solid after you're out of the opening five or so moves, opponent gets a knight in or a queen, trashes that entire side of the board before you can manage to evict it somehow. Usually it's a knight. Knight invasions were my least favorite thing to deal with at that level. Especially so with short time control as the catalan can produce positions in unskilled hands that open the door for a knight to repeatedly check you, no mate threat just check after annoying check, running down your clock.

As both an Spanish and Catalan I find extremely amusing Levy speaking Spanish, I just hope he does this every time he plays the Catalan. I mean it's not offensive at all, here in Spain we try not to take things very seriously even though some rads make shit tense.

I'll respond to Levy's comment at 44:37 or so: I always slow down the speed to 75. Then he sounds more "Russian" which is so much more "chessy" for me who is in awe of the mystique of the Russian chess masters of the past (and present). This impulse to fantasy and imagination is important to me in my chess ascension to a higher level. I'm heading there slowly but surely and (for those who follow these games in this series) be aware that I intend to play Levy in this format someday and WIN or at least DRAW. It's good to have the desire for a goal like this and is a great tool for me to keep studying with this particular goal always in mind. This is a measure (nim noga) of my respect for his teaching abilities.
