Real Pro Tip - Ask for a table near the kitchen as the meats are always fresh and you can get the freshly seared crust pieces. And don't waste space messing with the salad bar... That's for amateurs.

We in South Africa have a restaurant called Carnivores. Similar concept, flag up, bring meat, flag down, stop meat. On swords over coals ( a huge round fire pit) they cook up to 15 types of meat, depending availability - chicken, lamb, beef, pork, sausages, but then… all the wild stuff- crocodile, ostrich, zebra, springbok, eland, buffalo, gemsbok, waterbuck etc…

You know what GUGA, let me tell you about Rice&Beans. Here's my recipe: Campbell's Pork & Beans, RICE, brown sugar, and BUTTER. Now adjust to your taste...sweet or not so sweet, etc... but the butter..... man, ain't nothihg like it. That's my recipe.

Was at one for the first time last week... I'll never go again. So overrated imo. Beside the 45min wait, being sat and not even given a plate for 30 min, or asked what dining experience we wanted until I abducted a gaucho. (they could have sold us a lot of drinks in that time period) They kept bringing the same overcooked meats. Thinking I got to try 5 different cuts max. I get that they were understaffed that night, but at least they could've brought us more variety.
I actually went all the way to Detroit to eat at Texas de Brazil for Easter brunch, and it was an amazing experience. The first time ever trying Picania and it was delicious
When I take newbies to a Brazilian steakhouse I always tell them "don't make a rookie mistake and fill up on salad" because the salads all look soooo good and it is easy to get overwhelmed
It's good to have a little bit of salad however since it acts as a palate cleanser. And gives basic roughage so that later on your ass isn't plastered to the toilet.
This is pretty standard for any place with a buffet. In the Asian world, you just go for the proteins and don't bother with just about anything else. All comes down to min/maxing. Unless you're dinning on the company's dime, then just have what you want.

I have eaten at Brazilian grills across the country and it’s OK. It’s not knockout to me and his total love for picahna is on him. I like a porterhouse and I like an American style steakhouse better to each their own, but I’ve never been blown away by Brazilian grills first off I don’t really like skewered meat as good asdirectly grilled meat. Some of the food is absolutely delicious but he’s acting like it’s not that expensive it is I’ve never eaten at a Brazilian grill without spending at least $80-$90 per person.
I LOVE Guarana. My mom grew up in Brazil and so I grew up with it as her favorite and found early on that I love it too. Churrasco is my go to birthday dinner. Tucanos is the closest for me, and, while not the most authentic, is really good.
Its been since 2005 that I was in Brasil, and this episode really took me back. With all your travels lately, you really should take your viewers home for a while. If they could see all the amazing restaurant experiences available, you would probably be responsible for a huge tourism boost all by yourself. No matter how authentic the American versions might be, nothing compares to a real churrascaria in Brasil. Same with everything else, from the pay by the kilo places on the side of the highway to the pizza rodizio. Even the street food outside a samba can't be matched by anything people could try to recreate here. Just writing this makes me want to go back for Año Nuevo/Reveillon! Thank you so much for these memories and please, take us to Brasil!

I went to a Brazilian restaurant years ago in L.A it’s no longer open anymore. When they pass the meats most of the time it’s sausage or chicken. The beef would only come around every 15 minutes and you only get 1 piece.They try to get you full on the other stuff.

In Brazil, when we go to an all you can eat steakhouse we have a rule: “don’t leave until you see the owner crying” It’s basically a war between them trying to fill you with cheap stuff and you trying to eat only the expensive ones.
Really nice video! Just one note: Lamb IS a brazilian thing for barbecue in some regions. In the northeast region, mainly in the countryside, you will find places that serves lamb and goat meat in the skewer, and it's delicious.
I have to admit that goat is an acquired taste. I've eaten goat on several occasions (in Mexico, for one as well as Stephanie Izzard's The Girl and the Goat) - and it's just not for me. Never had lamb from Brazil; about the only time I eat lamb is when I go to a Greek restaurant and it is a nice change of pace - but I'm still a beef, chicken and pork guy.

We traditionally dont have it in Brazil. Today many have it, but is not from here. We eat ribs just like we eat the other meats, without sauces (maybe garlic or chimi churri, but its about that). I've seen some people doing bbq ribs here and it does not look good until they put the sauce in it. It almost like they want to mask they f up. The sauce has lots of sugar in it, so it caramelizes and helps masking up a bland rib. The rub also has sugar in it and it also helps giving the "roast" color without having to put the effort. Without the rub and sauces it does not taste as good as a traditional one. But I've never ate a true one made by americans (and neither on a specialized american restaurant here) to really have a solid opinion on it.
There are a couple Brazilian steak houses near me, I don’t go there often enough because I can’t control myself, but I did take my son for his 18th birthday just recently, his eyes were so big, and he had the biggest smile on his face the whole time ☺️☺️☺️

I remember when I went to my first Brazilian steakhouse... it was all you can eat and ... ohhhh myyyyyy. That meat is SOOOOOOO GOOOOOOOD. I dunno which all I tried but I tried plenty different kinds and they were seasoned perfectly. They cut it off of those skewers. Mannnnn try it.
In the event you go to Denny's to try their steaks, I ordered an 8 oz sirloin medium rare fully expecting them to overcook it and was pleasantly surprised to find it nice and bloody. The taste wasn't too shabby either, but that's probably because I was eating it at 2 AM.
Dennys or any other restaurant is hit or miss. It depends on who’s in the kitchen when you’re there. When I worked at a cafe I would give decent amounts of meat and ingredients on the sandwich’s . There was no set amount given when I was trained . After a while i had a few customers only come in when I was in the kitchen.
I don't think a restaurant that served several things that were terrible should get anywhere near an 8. and "don't come here for this" is not a defense.

“Don’t come here for this” is a reasonable defense in many cases. I wouldn’t go to an Italian restaurant for Indian food. I’m not ordering steak and eggs from a diner and expecting steakhouse levels of flavor, I can keep going but I think you get my point. That being said, 8/10 is a pretty high score.
I proposed to my wife at a Texas de Brazil. We also found another Brazilian steakhouse near where we were living that was much better than Texas de Brazil. I was introduced to skirt steak there and it totally changed my life.
Guga I usually agree with you. But today I definitely saw that you had a bias. It's understandable. But I think you let it get in the way of giving an honest rating. The first restaurant for example had food that was borderline inedible and there were problems with the other one too. You could tell some of the chicken was overcooked and dry but you didn't even try to mention that. I've come to expect more from you. Both those ratings seemed a little bit inflated unless you were only including the pecania.
I once worked for a restaurant like that first one but it was on a massive river cruise boat at the gold coast. I used to be a waiter that would carve the meat infront of you. You can ask for what kind of meat you want, so if i had a skewer of beef, i could carve it closer to the middle to give you a more rare cooked meat compared to the edge which was well done.
Texas de Brazil has a salad bar? I kid! The cheese on there is perfect for combining with the sausage. It cuts the heat and multiplies the flavor. For me, the whole point is trying all the meats and filling up with good stuff, not necessarily just filling up on picanha to eat as expensive as possible.
I dated a Brazilian for 5 years, between going to Brazil and these “fancy” restaurants… no comparison. The only things worth getting at these restaurants was the mushrooms, potato gratin, picanha, brisket, other steak cuts (just load up on these you’re not missing out). They’ve currently updated drink prices and even getting water costs you over 7$ a person because they give you “sparkling”. Utterly garbage practice when you’re already paying for all you can eat (50$ per person). For the side dishes, their bread is alright and the caramelized bananas are good.
Thank you guga, I had to teach so many gringos how to eat properly in Brazilian steakhouses (thin slices, two plate setup, don't splurge on the salad bar, garlic picanha is basically just leftovers, among other things), now I just send them this video!

Yes, thank you Guga! My Brother in law is also from Brazil and I had Brazilian food in both Orlando and New York City and both were some of the best food I have ever had, not just the meat either. Also guarana is amazing! I used to drink "Bawls" soda a lot when I was younger, that is also guarana

@@Zero1380X I suspect it's at least in part people who don't want to go vegan but want to minimize their climate impact. Chicken has the lowest carbon footprint of any meat raised on an industrial scale because of the high conversion ratio of feed to edible meat. Similarly, pork and wild-caught fish tend to be good climate choices if you're not going to go vegan. Beef, on the other hand, is a climate disaster. If everyone in the world stopped eating it tomorrow, the world would instantly get massively closer to the goals set at the various "climate summits" that nobody actually follows.
This guy's opinion on steaks is valued above all others, and the fact that he has a couple stains on his t-shirt makes him 10 times more believable. Guga is a real man.
If you are in Tampa, go to Bern’s. Fantastic. New York Prime and Bones both in Atlanta are excellent. Some good chains are Del Frisco’s, Smith and Wolenski, Capital Grill. Sullivan’s, Morton’s and Ruth’s Chris are ok. I agree with Guga that Longhorn is the best mid-range steakhouse chain.
I listened and made picanha for my family a year and a half ago, and man you're right. Ive made some nice meals since, but nothing has compared to picanha, French fries, and a salad. Everyone loved it. Thanks for the steak rec.
For my fellow Floridians who are into gardening, Yuca/Cassava is one of the easiest things to grow in our subtropical climate. So not only is it "absolutely delicious" in the kitchen, it's "ridiculously easy" to grow in your back yard if you feel so inclined.

You right guga!! Ever since I went to foca de chao in Atlanta, been buying guarana Antarctica ever since. It’s like a Shirley temple in a can. Hands down best ginger ale in the world
here in London we have fogo de chao (never been to unfortunately) and preto. Unlike guga, my strategy is: order just meat, don't touch the rest of the buffet and when you are full with meat just get some salad/rice and so on. The amount of meat you are going to eat will be definitely bigger. About the meat cuts, don't try everything just for the sake of it, focus on the 2-3 pieces you like and order them over and over and over and don't eat any bacon or sausage, they just fill you up.
I think you are biased about different kinds of beef cuts. Picanha is not the best cut. You never gave Tri-tip a chance. You know how to cook and you should know better.
Pão de queijo is just *chef's kiss*! Completely melts in your mouth. Fogo de Chão is my favorite Brazilian steakhouse. Longhorn is my favorite US steakhouse.
Pastel looks similar to a sicilian food called pidoni but the fillings are definetly different. The traditional filling is sliced tomatoes , escarole, tuma cheese and anchovies but really you can fill them with whatever you want. My favourite is nduja , cheese and spicy salame

It’s basically a war between them trying to fill you with cheap stuff and you trying to eat only the expensive ones.

Just one note: Lamb IS a brazilian thing for barbecue in some regions. In the northeast region, mainly in the countryside, you will find places that serves lamb and goat meat in the skewer, and it's delicious.
I have to admit that goat is an acquired taste. I've eaten goat on several occasions (in Mexico, for one as well as Stephanie Izzard's The Girl and the Goat) - and it's just not for me. Never had lamb from Brazil; about the only time I eat lamb is when I go to a Greek restaurant and it is a nice change of pace - but I'm still a beef, chicken and pork guy.
Guga, can you please make a separate episode about those fantastic brazilinan apetizers and how to cook them? There are a few people on youtube that try to make them, but with you it will be 100% authentic.

We traditionally dont have it in Brazil. Today many have it, but is not from here.
We eat ribs just like we eat the other meats, without sauces (maybe garlic or chimi churri, but its about that).
I've seen some people doing bbq ribs here and it does not look good until they put the sauce in it. It almost like they want to mask they f up. The sauce has lots of sugar in it, so it caramelizes and helps masking up a bland rib. The rub also has sugar in it and it also helps giving the "roast" color without having to put the effort. Without the rub and sauces it does not taste as good as a traditional one.
But I've never ate a true one made by americans (and neither on a specialized american restaurant here) to really have a solid opinion on it.

There are a couple Brazilian steak houses near me, I don’t go there often enough because I can’t control myself, but I did take my son for his 18th birthday just recently, his eyes were so big, and he had the biggest smile on his face the whole time ☺️☺️☺️

I remember when I went to my first Brazilian steakhouse... it was all you can eat and ... ohhhh myyyyyy. That meat is SOOOOOOO GOOOOOOOD. I dunno which all I tried but I tried plenty different kinds and they were seasoned perfectly. They cut it off of those skewers. Mannnnn try it.
In the event you go to Denny's to try their steaks, I ordered an 8 oz sirloin medium rare fully expecting them to overcook it and was pleasantly surprised to find it nice and bloody. The taste wasn't too shabby either, but that's probably because I was eating it at 2 AM.
Dennys or any other restaurant is hit or miss. It depends on who’s in the kitchen when you’re there. When I worked at a cafe I would give decent amounts of meat and ingredients on the sandwich’s . There was no set amount given when I was trained . After a while i had a few customers only come in when I was in the kitchen.

“Don’t come here for this” is a reasonable defense in many cases. I wouldn’t go to an Italian restaurant for Indian food. I’m not ordering steak and eggs from a diner and expecting steakhouse levels of flavor, I can keep going but I think you get my point. That being said, 8/10 is a pretty high score.
I proposed to my wife at a Texas de Brazil. We also found another Brazilian steakhouse near where we were living that was much better than Texas de Brazil. I was introduced to skirt steak there and it totally changed my life.
Guga I usually agree with you. But today I definitely saw that you had a bias. It's understandable. But I think you let it get in the way of giving an honest rating. The first restaurant for example had food that was borderline inedible and there were problems with the other one too. You could tell some of the chicken was overcooked and dry but you didn't even try to mention that. I've come to expect more from you. Both those ratings seemed a little bit inflated unless you were only including the pecania.
Saw the same, that chicken was dry like a desert and it was super biased. If you ask me, this is a fast way to lose all your credibility.
I once worked for a restaurant like that first one but it was on a massive river cruise boat at the gold coast. I used to be a waiter that would carve the meat infront of you. You can ask for what kind of meat you want, so if i had a skewer of beef, i could carve it closer to the middle to give you a more rare cooked meat compared to the edge which was well done.

The higher end places have oysters and crab legs. And all kinds of non meat. Sometimes the salad bar is dope
Texas de Brazil has a salad bar? I kid! The cheese on there is perfect for combining with the sausage. It cuts the heat and multiplies the flavor. For me, the whole point is trying all the meats and filling up with good stuff, not necessarily just filling up on picanha to eat as expensive as possible.

I dated a Brazilian for 5 years, between going to Brazil and these “fancy” restaurants… no comparison.
The only things worth getting at these restaurants was the mushrooms, potato gratin, picanha, brisket, other steak cuts (just load up on these you’re not missing out). They’ve currently updated drink prices and even getting water costs you over 7$ a person because they give you “sparkling”. Utterly garbage practice when you’re already paying for all you can eat (50$ per person).
For the side dishes, their bread is alright and the caramelized bananas are good.
Thank you guga, I had to teach so many gringos how to eat properly in Brazilian steakhouses (thin slices, two plate setup, don't splurge on the salad bar, garlic picanha is basically just leftovers, among other things), now I just send them this video!

Yes, thank you Guga! My Brother in law is also from Brazil and I had Brazilian food in both Orlando and New York City and both were some of the best food I have ever had, not just the meat either. Also guarana is amazing! I used to drink "Bawls" soda a lot when I was younger, that is also guarana

@@Zero1380X I suspect it's at least in part people who don't want to go vegan but want to minimize their climate impact. Chicken has the lowest carbon footprint of any meat raised on an industrial scale because of the high conversion ratio of feed to edible meat.
Similarly, pork and wild-caught fish tend to be good climate choices if you're not going to go vegan.
Beef, on the other hand, is a climate disaster. If everyone in the world stopped eating it tomorrow, the world would instantly get massively closer to the goals set at the various "climate summits" that nobody actually follows.

If you are in Tampa, go to Bern’s. Fantastic. New York Prime and Bones both in Atlanta are excellent. Some good chains are Del Frisco’s, Smith and Wolenski, Capital Grill. Sullivan’s, Morton’s and Ruth’s Chris are ok. I agree with Guga that Longhorn is the best mid-range steakhouse chain.

I listened and made picanha for my family a year and a half ago, and man you're right. Ive made some nice meals since, but nothing has compared to picanha, French fries, and a salad. Everyone loved it. Thanks for the steak rec.

For my fellow Floridians who are into gardening, Yuca/Cassava is one of the easiest things to grow in our subtropical climate. So not only is it "absolutely delicious" in the kitchen, it's "ridiculously easy" to grow in your back yard if you feel so inclined.

You right guga!! Ever since I went to foca de chao in Atlanta, been buying guarana Antarctica ever since. It’s like a Shirley temple in a can. Hands down best ginger ale in the world
here in London we have fogo de chao (never been to unfortunately) and preto. Unlike guga, my strategy is: order just meat, don't touch the rest of the buffet and when you are full with meat just get some salad/rice and so on. The amount of meat you are going to eat will be definitely bigger. About the meat cuts, don't try everything just for the sake of it, focus on the 2-3 pieces you like and order them over and over and over and don't eat any bacon or sausage, they just fill you up.

Pão de queijo is just *chef's kiss*! Completely melts in your mouth. Fogo de Chão is my favorite Brazilian steakhouse. Longhorn is my favorite US steakhouse.

Pastel looks similar to a sicilian food called pidoni but the fillings are definetly different. The traditional filling is sliced tomatoes , escarole, tuma cheese and anchovies but really you can fill them with whatever you want. My favourite is nduja , cheese and spicy salame
