QUESTION: If Vegan Kefir isn't available where I live, can I use an alternative kind (Greek style)? QUESTION: Can/do you reuse the strained water? QUESTION: Is adding the vinegar to the water only to remove stains in the cloth or is there some chemical magic that happens to help curdle the yoghurt? QUESTION: If I freeze this yoghurt before and/or after processing it through simmering, will it change the consistency (like with tofu)? I've noticed that the yoghurt I buy has to be used immediately or it'll spoil quite quickly. QUESTION: Could I add the herbs to the yoghurt BEFORE simmering/straining it? Finally, I do hope that your family in Brazil is safe from the floods. 🙏 Be safe and keep these videos coming! 💞

OMG this is pure genius , I even have a stained tea cloth that needs help , think 🤔 I will add some nutritional yeast to make cottage cheese. Many many thanks and a Happy New Year 🍷
I've been doing this during the last year and it is the easiest way and the most tasty. I don't even boil it, I just drain it overnight with a cheesecloth. Then some pressure but not too much.

I have not seen Kefir yogurt, just regular plant based yogurt at the store. I make my own yogurt with 3 only ingredients, cashews, soy milk, and probiotics and would like to make this cheese with my homemade yogurt, but not sure if I have to add tapioca, etc. that might be in the store bought Kefir you purchased, so that it turns out the same. I have Tapioca if I need to use it. Thanks sweet Lady !!

There are great yoghurt strainers on amazon! But mine needs a filter too, use coffee filters, disposable or reuseable (I bought cheap on aliexpress). 🤗
i make labneh through a similar process but by using specifically unflavoured coconut yogurt :D it has a tang, texture and mouth feel that is close to Greek yogurt. The tapioca starch already in it also makes it easy to transform it into other cheeses (i.e. straining it more and adding penicillium candidum for brie). Mixing it with a labneh made from thick nut or soy yogurt (that also has tapioca starch) could also alter the texture to other cheeses if preferred!! it's a gem. i prefer not to cook it at all during the cheese making process but feel free to add extra lactobacillus pills if you do!! they really do wonders for the flavour development

Kefir has got more strains of probiotics and is fermented in a different way. It’s a lot more fermented than regular yogurt.
