Vegan Birria Tacos (quesabirria)

- These had been trending on TikTok while I was in the thick of baby phase and trying to navigate being the default parent while Eddie was back at work, but now I finally have made this vegan!
Birria tacos are traditionally made with goat or beef and are a celebratory dish in Mexican culture, originating from Jalisco! These vegan quesabirria tacos are a labour of love, but one batch makes a LOT of tacos so it makes sense that it can feed a crowd!

Working my way back to vegetarian & plant based so this looks so yummy! Very similar to how I make chili. For extra bit of smokiness toast the dried chilis in a pan before cooking them in the water. I think I’ll try this out with jackfruit cuz I don’t have soy curls at the moment! Thanks for sharing :)

Lovely and tasty homage! I’m Mexican and grew up using these chilies for base sauces of many dishes.
This sauce in particular is very versatile. I use mine for enchiladas and pozole. You can also pour it over fried or baked potatoes 😋

I find my favorite cheese alternative for Birria is Mykonos liquid mozzarella! It’s absolute perfection!
I'm allergic to cashews :( But that sounds like a perfect mild cheese substitute!

Also vegan mozzarella cheese is good. I tend to find that when it comes to vegan cheese mozzarella is always a good choice
Also idk what queso blanco is in this context because i missed the tiktok trend of it but queso blanco literally translates to white cheese, but there is from what I know there is an Americanized "queso blanco" that is white nacho cheese

I haven’t made that many but I imagine so! Tamales alone are a labour of love but feed a crowd!
